The Green Mill is the birthplace of the poetry slam, still held each Sunday evening, which explains why much of the bathroom graffiti is written in verse.</p>
<p>As for sitting where Capone sat, you really can do that, too. His booth is the one at the end of the bar, on the north side—the only seat in the house that has a view of both doors. Chicago has given the world many great creations: brownies, the zipper, skyscrapers, deep-dish pizza. Yet people forget about the jibarito. Local restaurant owner Juan &#8220;Pete&#8221; Figueroa invented the sandwich in the mid-1990s. His big idea? Take two flattened, crisp-fried plantains and use them as &#8220;bread&#8221; for a Puerto Rican steak, cheese, and garlic-mayo sandwich. The concept spread fast, and soon chicken jibaritos, shrimp jibaritos, curry-mayo jibaritos, and more riffs on the original emerged from neighborhood kitchens.</p>

(Jon Stewart famously referred to it as &#8220;tomato soup in a bread bowl.&#8221;) What you might not know is that there&#8217;s something deeper than deep-dish—a bigger, doughier version known as stuffed pizza.</p>
<p>These pizzas thud onto tables around the city; Giordano&#8217;s has 50 or so restaurants in the metro area, plus several beyond Illinois. But my favorite location is downtown, on Rush Street—the one where all the tourists go. I love to look around the clamorous room and watch everything, from families with fidgety toddlers to spiky-haired Japanese couples to Urdu-speaking university students. You can almost see panic in their eyes when the pizza arrives, and a waterfall of mozzarella spills down from each wedge as the server spatulas it up from the platter and hefts it onto the plate. Then they have to decide whether to eat the enormous, gooey slice with a fork or by hand. It’s a lot to observe, but since it takes 45 minutes to cook a Giordano’s stuffed pie, I’ve got the time while I wait.</p>

His pal, Machine Gun McGurn, part-owned the club, which was central to their bootlegging operation. If it’s not too busy, ask the bartender to show you the trapdoor behind the bar that leads down to tunnels where they hid the hooch.</p>
<p>The art deco décor hasn&#8217;t changed much since the 1920s. Velvet-cushioned booths curve under paintings in florid scrolled frames. Green candles flicker on white-clothed tables, while scalloped ceiling lights add a low yellow glow.</p>
<p>A couple of seasoned bartenders patrol the glossy wood bar that swoops halfway through the room. They&#8217;ll shake up a Sidecar or Manhattan or pop open a Pabst for you. But they&#8217;re best known for their Martini: a crystal-clear, up-with-two-olives, non-fancy-pants gin bracer.</p>

Cook without moving, popping any large air bubbles with a knife or the edge of a spatula or pizza peel, until bottom side is charred in spots and light golden brown. Flip with a large spatula, pizza peel, or tongs and cook until other side is charred and browned. You need more grilled bread in your life. Trust me on this one. This grilled flatbread with za&#8217;atar is a great place to start—the dough is an extremely versatile one, made with yogurt and ready to go from scratch to table all in one afternoon, but the real key here is not to skimp on the za&#8217;atar. This is not a light dusting or even a big pinch. This is bread pretty much caked in the stuff, and that&#8217;s how it should be.<br />
For the Flatbread (see note):<br />
10 ounces (about 2 cups) bread flour<br />
1 teaspoon Diamond Crystal kosher salt<br />
1/2 teaspoon instant or rapid-rise yeast<br />
2 teaspoons sugar<br />
2 tablespoons extra-virgin olive oil<br />
6 1/2 ounces (about 3/4 cup plus 1 tablespoon) yogurt or whole milk<br />
To Serve (see note if using store-bought za&#8217;atar):<br />
1 1/2 tablespoons dried oregano<br />
2 tablespoons minced fresh thyme leaves<br />
2 tablespoons minced fresh savory<br />
1/4 cup toasted sesame seeds<br />
1 1/2 tablespoons ground sumac (see note)<br />
2 tablespoons Diamond Crystal kosher salt<br />
Extra-virgin olive oil, for brushing and drizzling<br />

Add olive oil and the yogurt or milk and knead with dough hook at low speed until dough comes together into a smooth ball. Dough should stick slightly to bottom of bowl as it kneads (add slightly more yogurt or milk as necessary). Continue to knead for 5 minutes. Alternatively, form dough in a food processor by adding all ingredients and processing until the dough rides around the blade. Transfer the dough to a clean bowl, cover tightly with plastic wrap, and allow to rise at room temperature until roughly doubled in volume, about 2 hours.</p>
<p>Turn dough out onto floured work surface. Using a bench scraper or a knife, cut the dough into 6 equal pieces. Roll each piece into a ball, then place on a well-floured surface (leaving a few inches of space between each one) and cover with a floured cloth. Alternatively, place each ball of dough in an individual covered pint-size deli container. Allow dough to rise at room temperature until doubled in volume, about 2 hours.</p>

<p>There is just no fighting it – it’s early morning, it’s cold outside, the wool mittens have made their annual appearance, Christmas music is pumping. Like, AS IF there is any restraint when it comes to a Peppermint Mocha pit stop. As if.</p>
<p>The baristas always get a little annoyed with me because I’m one of those people who has a super particular order that takes at least 15 sentences to communicate (full fat, no whip, and half the amount of syrup and chocolate) (if you’re a barista, I’m so sorry for my ways), but nevertheless, the December morning peppermint mocha is always, always, always worth it.<br />
I’ve developed something of a habit, which is great, but it also means that I now cannot start my day without a peppermint mocha. (Or Cashew Coffee. Or an Oatmilk Honey Latte. Just really any hot cozy drink.) I mean, like, even if it’s totally ridiculous and out of my way to find one, it must be done. This is my dilemma.</p>

<p>1 tbsp gelatin 1 envelope<br />
1 cup sugar<br />
2 tbsp corn syrup<br />
1 pinch salt<br />
1/4 tsp mint extract<br />
1/2 cup powdered sugar<br />
1/4 cup candy melts orange<br />
1/4 cup dark chocolate chopped<br />
Special Equipment<br />

<p>Instructions<br />
Prep<br />
Bloom the gelatin: In the bowl of your stand mixer, pour in 1/4 cup of cold water. Sprinkle the gelatin on top and mix to moisten.<br />
Pan: lightly butter an 8&#215;8 inch pan, then dust with icing sugar. If desired, line with parchment paper.<br />
Tools: Lightly butter a spatula and an offset spatula.<br />
Marshmallows<br />
In a pot, mix together the sugar, corn syrup and 1/4 cup water. Stir until the sugar is incorporated and wet, then bring to a gentle boil over medium high heat, swirling occasionally to distribute the heat. Heat until the mixture reaches 240°-245°F. When the sugar mix comes to temp, remove it from the heat and let the bubbles subside. Sprinkle in a bit of salt and add the mint extract to the gelatin. Carefully pour the sugar into the bowl of the stand mixer.</p>

Let it rest. After your dough is ready, it’s time for a rest so it can puff up. Now’s a good time to have a cup of coffee or tea.<br />
Roll the dough into balls. When the dough has doubled in size, it’s time to punch it down and shape it into little balls.<br />
Dip the balls. After the balls are shaped, dip them in brown butter and a mix of cinnamon and sugar. Pop everything into a buttered bundt pan.<br />
Bake. Bake until golden, gooey, and delicious.<br />
Drizzle. Finish off with a drizzle of vanilla icing while it’s still hot so it melts into all the nooks and crannies.<br />
Enjoy! Eat it while it’s still warm, there’s nothing better, trust me!</p>

<p>1. If the recipe you’re using has a chilling time, make sure you chill the dough, it helps prevent spreading when you bake.<br />
2. In a similar vein, if I have the time, I’ll actually chill the cut out cookies in the fridge.<br />
3. Let the cookies cool completely before icing otherwise the residual heat will cause the icing to melt.<br />
4. It’s best to let the icing “cure” overnight. Sometimes it looks dry but it’ll dent.<br />
5. Practice! I really does make perfect. Plus if your cookies don’t come out looking how you want them to, you always get to eat them.<br />
I feel like they both have really good qualities and are kind of similar. They both have short legs and long bodies and are absurdly cute. Both breeds seem to have fun personalities too. To be honest, some of my favorite Instagram accounts are actually dogs. Dogs just too cute, like these cookies.<br />
If you have a corgi lover in your life, or if you just love gingerbread, I hope you give these cookies a try. The gingerbread recipe is one that I’ve been making for over ten years, adapted from an old photocopy of a recipe that my sister-in-law gave me back in the day – to be honest I’m not sure where the recipe is from. I like it because unlike other recipes I’ve tried, it’s not too hard or crispy, even once it cools. I also upped the ground ginger in it to make it extra gingery.</p>

I like to call this lasagna Super Saucy, which honestly I love. What I learned through the endless rounds of making it, is that if you don’t need your lasagna to hold together with awesome sliceability. And if you’re more the kind of person who is okay with scooping it out with a spoon and straight into your mouth, then you are in for a real lasagna treat when you make it the Super Saucy Way.</p>
<p>This pan of hot melted cheese I MEAN LASAGNA, while not at all clean and tidy like lasagna is supposed to be, was actually my favorite – it was so saucy, so soupy at first, but absolute lasagna perfection the next day with just the right amount of moisture and a clean(er) sliceability once it was completely cooled.</p>

<p>3/4 cup warm milk 110ºF<br />
2 1/4 tsp active dry yeast 1 envelope<br />
1/4 cup sugar<br />
1 egg room temp<br />
1 egg yolk additional, room temp<br />
1/4 cup unsalted butter melted and cooled<br />
3 cup bread flour or 360g all purpose flour + 3.57g vital wheat gluten<br />
3/4 tsp salt<br />
Brown Butter Cinnamon Sugar<br />
1/2 cup unsalted butter<br />
3/4 cup sugar<br />
1.5 tbsp cinnamon<br />
Vanilla Icing<br />
1 cup icing sugar<br />
2-3 tbsp whole milk<br />
1/2 tsp vanilla<br />
Special Equipment<br />
6 cup bundt pan</p>
<p>Instructions<br />
In the bowl of an electric mixer, add the milk and sprinkle on the yeast. Let sit until the yeast starts to foam, 1-2 minutes. Stir in the sugar, egg, egg yolk, and melted butter then stir in the flour and salt with a wooden spoon until everything comes together into a ball of dough.<br />
Knead with the dough hook on medium for 8 minutes. Alternately, knead by hand for 8-10 minutes on a floured surface. Lightly oil and large bowl and place the dough inside.</p>
<p>Cover with plastic wrap and a kitchen towel and let rise for 1 to 1 and a half hours or until doubled in size.</p>

What should be the flour type and yeast used? Today, especially in big cities, people think about these when eating bread.<br />
We are the most bread consuming country in the world. We eat 104 kilograms of bread per person per year! Bulgaria is next to us and this number is 95 kilos; 52 kilos in much lower Italy. We cannot imagine a kitchen without bread. We do not consider ourselves to have eaten without bread. Bread is eaten for breakfast, bread for sandwiches, bread in soup, bread even with rice. Of course, a life without bread cannot be imagined not only in our country but also in many cultures of the world. What we call bread can be tortilla in South America, chapati in India, and drumstick in France.</p>
<p>Once making bread was a time-consuming and costly business. Growing wheat, harvesting, grinding, making the bread, baking… All of them required great labor. Today, bread is everywhere, whenever we want, even when we don&#8217;t. On the one hand, there are tables conquered by industrial bread, on the other hand, the number of people making bread at home is increasing. In cities, there are people who grind their own flour and feed their sourdough.</p>

Bread is a basic need, according to many, it means being full and living. There are idioms in our language such as &#8220;earning bread money&#8221;, &#8220;let the bread multiply&#8221;, &#8220;take your bread off the stone&#8221;. It also means sharing bread. Another proverb is, &#8220;Whoever eats his bread alone carries his burden alone.&#8221; Bread also reminds us of our childhood. Pieces of bread that we added to noodle soup when we were sick; the bread we spread with jam and eat; the bread we use for our favorite sandwich… Has anyone not eaten that top of hot bread as a child? We all have a breaded memory.</p>
<p>It&#8217;s surprising that, while so valuable, bread is one of the most wasted foods in the world, right? Every year, 900 thousand tons of bread is thrown away. This means 24 million slices of bread. If we look at the basis of calories, this figure is enough to save 26 million people from hunger. It&#8217;s not just household waste; There is also a serious waste in the process from the field to the bakery.<br />
In Turkey, every year 33 billion, 120 million are produced daily bread. Is not it too much? Very. This production exceeds the need and demand. According to research, 3 million of the daily waste of bread that is close to 5 million are in bakeries, 1.5 million at home and 0.5 million in mass consumption areas such as dining halls, restaurants and hotels.</p>

The purpose of making Sırmast is to catch a new and different flavor by using stale breads. Unleavened dough is kneaded with flour, salt and water and left for 30 minutes. One centimeter thick dough is rolled out. It is cooked on both sides in a lean sheet. It is cut into squares the thickness of two fingers. After the garlic is crushed with salt, it is whipped with yogurt. Square doughs are dipped in yogurt and stacked on a large plate. Plain butter is melted and poured over. Sprinkle chili pepper and mix the mortar. The mixture is poured over stale bread.</p>

The book of the first Refettorio in Milan, &#8220;Bread is Gold&#8221; has been published in recent weeks. The theme of Expo Milan in 2015 was &#8220;Feeding the Planet and Energy for Life&#8221;. Refettorio Ambrosiano, which opened during the Expo, still serves the homeless, but two years ago it hosted a different chef every week during the Expo. Among the guest chefs were legends such as Alain Ducasse, Alex Atala, Rene Redzepi and Mauro Colagreco. Each of them designed brand new dishes with the ingredients left over from the stands at Expo that day.</p>

<p>Bread is Gold, published by Phaidon, is a wonderful book with stories and recipes from these visits. Moreover, many of them are not only inspiring, but also extremely easy to apply at home. There are also some great ideas like using stale popcorn in pasta sauce or making an aromatic sauce from banana peels.<br />
Among the chefs who went to Refettorio was the Culinary Arts Academy. You can also find the recipes of the dishes such as şakşuka, buttermilk vaccine and iron dessert cooked there by MSA&#8217;s instructors and student chefs.<br />
Massimo wrote at the beginning of the book, “Create, try and hurry. &#8220;Use this book as a starting point for evaluating the food that is in your pantry and refrigerator.&#8221; Below each of the recipes in the book, there are blank lines for note. Perfect for using as a book and collecting new recipes and ideas.</p>

Egg whites. Egg whites are what give your cloud bread fluffiness and loft. If you’re going to separate egg whites yourself, be sure to not get ANY yolks into the whites or they won’t whip up. It’s better to separate your eggs while they’re cold, but they will whip up better if they’re at room temp. You can also just buy egg whites in a carton at the store, which is what I did. You’ll need 3 large egg whites or about 6 tablespoons of egg whites from a carton.<br />
Sugar. Just use regular white sugar. Sugar is what is going to stabilize your egg whites and let them fluff up even more. The sugar is also going to make your cloud bread just a little bit sweet.<br />
Cornstarch. You just need a tiny bit of cornstarch in your cloud bread, to help soak up any extra liquid in your meringue. Cornstarch also helps make your meringue shiny.<br />
Food coloring. This is optional, if you want to make your clouds colorful.</p>

Does it taste like eggs?<br />
Cloud bread is made from 3 ingredients: egg whites, sugar, and cornstarch. The egg whites are make up the majority of the recipe so it’s only natural that cloud bread will taste like eggs. If you want a sweeter cloud bread to help it taste less like eggs, add a 1/4 cup of sugar. Warning: if you do this, your cloud will not be as fluffy.</p>
<p>Do I need a stand-mixer to make cloud bread?<br />
Technically you don’t need a stand mixer. You can whip these up with a regular whisk or a hand mixer. But it will take a REALLY long time and a lot of arm muscle. You can do it! I use this milk frother and it works amazingly.</p>

Add your egg whites to a very clean, grease free bowl. Start to whip your egg whites on medium-low, until frothy and pale.<br />
Stir in sugar. Add the sugar, a little bit at a time on high, until the sugar dissolves and the egg whites start to foam up.<br />
Add the cornstarch. I like to sift the cornstarch in so that there are no lumps. Continue to whip on high until the egg whites become a glossy thick meringue that holds a peak. The egg whites are done when you lift the beater from the bowl and they hold a peak and look smooth and creamy like shaving cream If you tilt the bowl, the whites should not slide. Be careful not to over whip!<br />
Shape the cloud. Use a rubber spatula to scoop out the meringue and shape into a cloud on a parchment paper lined baking sheet.<br />
Bake. Bake in a low oven until golden and cooked through.</p>

So you get spoonfuls of just-set pudding and a little trickle of custard, for which I suggest a baking time of 35-40 minutes. If you prefer your pudding puffed up – more of a wobble than a quiver – then I suggest 40-45. Serves 6</p>
<p>For the custard:<br />
eggs 4<br />
full-fat milk 125ml<br />
double cream 500ml<br />
caster sugar 50g</p>
<p>panettone 300g<br />
golden sultanas 50g<br />
candied peel (optional) 3 tbsp<br />
pistachios 2 tbsp, shelled<br />
orange zest of 1</p>
<p>You will also need a 2 litre baking dish.</p>
<p>Set the oven at 160C/gas mark 3. Break the eggs into a bowl and beat until mixed. Add the milk, cream and caster sugar; beat everything lightly together with a whisk. Tear or slice the panettone into large pieces and place in the baking dish.</p>
<p>Scatter the sultanas and peel among the panettone. Finely chop the pistachios and sprinkle over the top. Pour the custard into the dish, soaking all of the panettone. Grate the zest of the orange over the surface, then bake for 35-45 minutes until lightly set. To check the pudding is ready, shake the dish – the custard should quiver in the middle. Take it from the oven and leave to settle for 15 minutes before serving.</p>

3 ripe bananas<br />
2 tablespoons of coffee powder<br />
50g ground almonds<br />
200g plain flour<br />
200g coconut sugar<br />
1 teaspoon of bicarbonate of soda<br />
1 teaspoon of baking powder<br />
70ml oat milk<br />
3 tablespoons of melted coconut oil<br />
1 teaspoon of sea salt flakes<br />
100g dark chocolate (optional)<br />
large handful of coconut chips (optional)<br />
method<br />
Preheat the oven to 180C (350F), fan setting. Line a loaf tin with baking parchment.<br />
Place the oat milk in a small pan over a medium heat and add the coffee powder. Heat until the coffee powder has dissolved, giving it a little mix to help. Once cooked, remove from the heat.<br />
In a large bowl, mix together the flour, ground almonds, coconut sugar, bicarb, baking powder and sea salt until there are no lumps. In a separate bowl, peel and mash the bananas until creamy, then add the warm coffee mixture and coconut oil, mix together.<br />
Spoon the banana mixture into the flour mixture and mix really well until a smooth batter forms. Once smooth, pour the mixture into the lined loaf tin.<br />
Put the loaf tin into the oven and bake for 45 minutes, until golden and a knife inserted in the centre comes out clean. Once cooked, leave to cool for at least 10 minutes to firm up.<br />
If using chocolate, place the dark chocolate into a small pan over a low heat and stir until melted. Once melted, remove from the heat and pour over the banana loaf. Sprinkle over coconut chips and leave to set before serving.<br />
This coffee banana bread is the perfect early morning breakfast. the rich coffee flavour tastes delicious, while the creamy banana creates the perfect soft loaf. we love to top this with melted dark chocolate, but you can also leave it plain.</p>

<p>Plus it’s only three ingredients! I mean, I loved dalgona coffee and pancake cereal, so maybe there’s something to this TikTok food thing?</p>
<p>After seeing multiple people ripping into and squishing their TikTok cloud bread, I just HAD to make some myself.</p>
<p>What is TikTok cloud bread?<br />
If you’re on TikTok and you’ve looked under #cloudbread you’ve probably seen the fluffiest, most impossible giant puffs of bread you’ve ever seen. All you need to make it is egg whites, sugar, and cornstarch. Cloud bread is essentially a softly baked meringue with some rebranding.<br />
If you’re not sure what a meringue is: it’s a type of dessert made from whipped egg whites and sugar. Sometimes a binder (in this case cornstarch) is added to give it a bit more structure. Meringues taste kind of marshmallow-y when gently baked and light and crispy when baked and dried out longer. If you’ve had pavlova or lemon meringue pie or macaron, you’ve had meringue and by extension, cloud bread.</p>
