For those who don’t toil in the cured-meat trade, the 12-pound pink and tan slabs filling up the kitchens are an impressive sight. Bread Basket owner Al Winkler burns through a lot of brisket—around 24,000 pounds weekly, which he says is more than any one restaurant in the nation.</p>
<p>Much of that corned beef will be piled into nine-ounce stacks and set between two pieces of rye or buried in an onion roll. But the scraps and shavings that aren’t pretty enough for a sandwich find a different home—the corned beef egg roll, which is exactly what it sounds like: cured meat bundled up in an egg roll wrapper and deep-fried.</p>
<p>Folding what was once considered waste into those wrappers represents what Winkler calls &#8220;found money.&#8221; But, five years after he wrapped his first egg rolls, shavings alone can’t meet the growing demand, and he’s stocking up on more 12-pound slabs of brisket to keep up.</p>

<p>White would go on to start Asian Corned Beef, which has since grown from one restaurant into a seven-location mini empire, with an eighth location on the way. ACB, as it’s affectionately known, now sells rolls for between $1.75 and $3.50. (The more expensive ones hold corned beef and cheese along with other ingredients, like steak, ground beef, or turkey.)</p>
<p>While the corned beef egg roll is a relatively simple affair, there are important differences among the many variations found across town. The best egg rolls are made to order, densely packed with higher-quality ingredients, and use the perfect ratio of corned beef to cheese, although some places have figured out how to make the concept work without cheese. At their peak, they offer appealing textural interplay between the soft meat, the crunchy shell, the melted cheese, and—if requested—sauerkraut or raw cabbage shreds.</p>

In many ways, White’s creation mirrors the origin story of Detroit’s venerable coney dog: Exactly 100 years ago, in 1917, newly arrived Macedonian immigrants in Coney Island, Brooklyn, ladled a near-flood of thin beefheart chili across a frankfurter and steamed bun, then topped it with a handful of diced onions and a few healthy streaks of mustard. In doing so, they created a food that, when transplanted by Greek and Macedonian diner owners to Detroit, became so beloved that there are now &#8220;coney islands&#8221;—small, diner-like restaurants that take their name from the iconic hot dog—on seemingly every street corner in the city. Similarly, the corned beef egg roll White made put a little immigrant twist on an already-popular staple.</p>

Oklahomans embrace both the Texas and the Cincinnati styles, along with coneys and coney sauce. Perhaps because of this open-armed attitude, it&#8217;s rather hard to pin down exactly what the state&#8217;s chili style is, so I turned to a born-and-bred Oklahoman (my sister-in-law) for some insight. Her response? &#8220;Is Oklahoma chili a thing?&#8221; Yes, yes it is. And, although it&#8217;s hard to define, it&#8217;s (almost!) certainly got beans. He’s not alone. Many of Detroit&#8217;s other old-school, corned beef–driven delis, like Lou’s, Mr. Fo-Fo’s, and D-Dee’s, now wrap their own take on the egg roll. If so, that raises a few questions: What exactly is it? Where did it come from? And, more generally, what does it take for a foodstuff to become a regional dish?<br />
As the name suggests, a corned beef egg roll consists of an egg roll wrapper rolled and folded around a small pile of razor-thin salted and cured beef. The package is then plunged into 350°F oil and cooked until crisp. Gooey, white, mild cheese, like mozzarella, and sour cabbage are typically, but not always, part of the formula. Rolls come in a range of sizes: At some places, the average customer would need two to make a meal; at others, one four-inch wrap stuffed to the seams will suffice. In all its iterations, the corned beef egg roll works because of its simplicity, relying on that old, trustworthy combination of salt and fat.</p>

When the Greek-Macedonian immigrant brothers John and Tom Kiradjieff arrived in Cincinnati in the early 20th century, they, like many other Greek immigrant restaurateurs at the time, sold coneys, or hot dog sandwiches slathered with a spiced meat sauce. (Coneys and coney sauce are a separate yet still chili-related regional specialty, most popular in Michigan but prevalent across the Midwest.)  Oklahoma chili is, by all accounts, very similar to the Texas bowl of red. The main exception is that Okies are far less militant about the exclusion of ingredients like beans and masa. According to the Oklahoma Historical Society&#8217;s account of the history of chili, Oklahoma has never met a chili it didn&#8217;t like. Oklahomans embrace both the Texas and the Cincinnati styles, along with coneys and coney sauce. Perhaps because of this open-armed attitude, it&#8217;s rather hard to pin down exactly what the state&#8217;s chili style is, so I turned to a born-and-bred Oklahoman (my sister-in-law) for some insight.</p>

<p>Another distinctive feature of Cincinnati chili is that it&#8217;s most often served on spaghetti, along with a generous helping of bright yellow shredded cheddar cheese. The chili follows a specific serving style, referred to by locals as &#8220;ways,&#8221; ranging from one to five. One means just chili; two means chili and spaghetti; three means chili, spaghetti, and cheese; four means chili, spaghetti, cheese, and beans or onions; and five means everything, including both beans and onions. In keeping with the hyper-regimented ordering style, there are other rules, including how the chili should be served (on an oval plate); how to eat it (one among many: use your fork to cut, not twirl, the spaghetti); and the necessity of developing your own style over time.</p>

The main rule of thumb is that it definitely cannot contain a filler of any kind, the most warned-against offender being beans. A healthy debate persists over whether tomatoes can be included, and a chili recipe published in the New York Times in January 2015 merited a full-article rebuttal in Texas Monthly, which targeted in particular the inclusion of coriander seed. In the end, the only way you&#8217;ll ever know whether something is a true Texas chili is if you&#8217;re Texan, at which point you can fight with other Texans about what does and doesn&#8217;t go in the dish. For the rest of us, &#8220;no beans&#8221; is about as definitive as it gets. While the stew also relied on cumin, beef, and some chili pepper, the brothers added ingredients that were more at home in a Mediterranean kitchen, like paprika and allspice, as well as the style&#8217;s distinctive combo of cinnamon and chocolate.</p>

Chili in Illinois isn&#8217;t chili: It&#8217;s &#8220;chilli,&#8221; with two l&#8217;s. The origins of this spelling are a matter of some conjecture, attributed either to an error by a sign painter at one of the state&#8217;s original chili parlors or to a desire to mirror the spelling of &#8220;Illinois.&#8221; According to local lore, the state capital of Springfield is also the state&#8217;s capital of chilli, as that was where Joe DeFrates, a legendary figure in the history of American chili (&#8220;the only man ever to win the National and the World Chili Championships,&#8221; according to the ICS), first started serving up his signature recipe, which consisted of tender ground beef, Hunt&#8217;s canned tomato sauce, a secret spice mix that included chili powder, and a dash of Tabasco.</p>
<p>The people of Illinois take their chilli just about as seriously as Texans take their chili, as evidenced by the passage of a joint resolution in 1993 by the Illinois House and Senate proclaiming the state &#8220;The Chilli Capital of the World&#8221; (perhaps a less provocative claim than if they had used the traditional spelling).</p>

1 pack of lasagne sheets<br />
200g spinach, roughly chopped<br />
200g frozen peas<br />
1 tablespoon of nutritional yeast<br />
For the pesto<br />
80g pine nuts<br />
80g cashews<br />
25g fresh basil, including stalks<br />
2 garlic cloves<br />
Juice of ½ lemon<br />
1 tablespoon of nutritional yeast<br />
125ml olive oil<br />
100ml water<br />
2 teaspoons of maple syrup (optional)<br />
Pinch of salt<br />
For the white sauce<br />
400ml almond milk (plus more if needed)<br />
50g nutritional yeast<br />
50g tapioca flour<br />
1 tablespoon of Dijon mustard<br />
Juice of ½ lemon<br />
Pinch of salt<br />
method<br />
Preheat the oven to 190C, fan setting.<br />
Make the pesto by placing all of the ingredients into a powerful food processor and blending until a thick, green pesto forms. Once blended, place the pesto into a pan over a medium heat.<br />
Add the chopped spinach and frozen peas and heat until the spinach has wilted. Once wilted, turn off the heat and put to one side until needed.<br />
Make the white sauce by placing the tapioca flour, lemon juice, nutritional yeast, mustard, almond milk and a pinch of salt into a pan over a medium heat, and cook until the mixture begins to bubble, continuously whisking to ensure the mixture stays smooth and doesn’t form any lumps.<br />
Continue whisking until the mixture becomes thick and elastic-like. At this point, remove from the heat and continue whisking to ensure it remains smooth &#8211; adding a dash more almond milk if it becomes too thick.<br />
Once ready to assemble the lasagne; spoon one third of the pesto mixture onto the bottom of a baking dish. Top with one quarter of the white sauce and cover with one layer of lasagne sheets. Repeat this process twice more, with pesto sauce, white sauce, lasagne sheets, until you have finished all of the pesto and you are left with lasagne sheets on top. Top with the last of the white sauce.<br />
Sprinkle with nutritional yeast and place in the oven to cook for 35-40 minutes until bubbling and golden on top.</p>

600g sweet potato, peeled and cut into small cubes<br />
Small splash of almond milk<br />

4 spring onions, sliced<br />
1 large red onion, peeled and finely diced<br />

Handful fresh coriander, roughly chopped<br />
Teaspoon smoked sweet paprika<br />
Juice of 1 lime<br />
Salt and pepper to taste<br />

method<br />
Preheat the oven to 200c, grill setting.<br />
Boil the peeled sweet potatoes until tender, about 30 minutes. Drain and leave to one side.<br />
Fry the onions, garlic and a pinch of salt, in a drizzle of olive oil over a medium heat for 5 minutes, until the onion softens. Add the paprika and slices of spring onion, sauté for 2-3 minutes, ensuring they are coated in the paprika, before adding the mushrooms and mixing again.<br />
Add both of the beans, coating them in the paprika, and sauté for a further 5 minutes. Then add the tinned tomatoes, maple syrup, lime juice, pepper and coriander, mixing everything through.<br />
Once the sweet potatoes are soft, mash them with the almond milk and a pinch of salt.<br />
Spoon the bean mix at the bottom of a baking tray and top with the sweet potato mash. Place in the oven to grill until it starts to crisp on the top, about 20-25 minutes.</p>

1 red onion, peeled and finely diced<br />
3 roasted garlic cloves, peeled<br />
1x 400g can of chickpeas, drained<br />
5 tablespoons of gram flour<br />
1x 200g jar of sun-dried tomatoes, plus the oil<br />
Large handful of coriander, chopped<br />
Drizzle of olive oil for cooking<br />
Pinch of salt<br />
method<br />
Place the roasted garlic, drained chickpeas, gram flour, a large pinch of salt, all of the oil from the jar of sun-dried tomatoes and as many sun-dried tomatoes as you like (the more you add, the more of the sun-dried tomato flavour you will have in the burgers &#8211; we add just over half of them) into a powerful food processor and blend until the mixture comes together to form a thick, slightly chunky mixture.<br />
Add the coriander and blitz a few times quickly until it breaks down into very small pieces and is evenly distributed throughout the mixture. Once mixed through, add the sliced red onion and mix through by hand.<br />
Take two tablespoons of the mixture out at a time and shape into burger shaped patties using your hands. Once shaped, place onto a plate and continue until you have finished the mixture.<br />
Once you have all of your burgers, either place in the fridge until ready to use or cook right away.<br />
To cook the burgers; place a large pan over a medium-high heat and add a drizzle of olive oil. Once warm, add the burgers. Cook for 5 minutes on each side until cooked through and nicely charred on the outside. You can also finish these off in the oven (180C/350F fan setting) for 5-10 more minutes if you’ve got a little longer to wait and want to evenly cook them all the way through.</p>

1 red onion, peeled and roughly chopped<br />
3 garlic cloves, peeled and roughly chopped<br />
100g sun-dried tomatoes, chopped<br />
2 teaspoons of smoked paprika<br />
2 tablespoons of tomato puree<br />
1x 400g can of chopped tomatoes<br />
1 teaspoon of maple syrup (optional)<br />
1x 400g can of red kidney beans, drained<br />
1x 400g can of black beans, drained<br />
1x 400g can of butter beans, drained<br />
Dash of water<br />
1 bag of chopped kale<br />
Olive oil<br />
Salt and pepper<br />
method<br />
Preheat the oven to 190C, fan setting.<br />
Place a large pan over a medium heat and add a drizzle of olive oil. Once warm, add the onion, garlic and a sprinkling of salt. Mix well and leave to cook for 5-10 minutes until soft.<br />
Once soft, add the chopped sun-dried tomatoes and smoked paprika, mix well and cook for a few minutes before adding the tomato puree, chopped tomatoes, maple syrup, butter beans, red kidney beans and black beans. Mix well and leave to simmer for 10-15 minutes, mixing through a dash of water if the stew ever becomes too thick.<br />
While the stew cooks, place the chopped kale onto a baking tray and drizzle with olive oil and a sprinkling of salt. Mix well and cook for 10 minutes until crispy.<br />
Once cooked, remove the kale from the oven and mix through the stew or serve on the side.<br />
Serve with lots of pepper on top of the stew.</p>

<p>Vegan burger 4 pieces,Mexican beans 150 g,Fresh onion 50 g,Coriander 20 g,Lime 2 pcs,Jasmine rice 60 gr,Avocado 2 pieces,Yedikule lettuce 3 pieces,Kapidag purple onion 2 pieces,Olive oil 50 ml,Tomato 2 pieces,Spinach tortilla bread 4 pieces,Salt 6 gr<br />
Fabrication</p>
<p>Jasmine rice is boiled for 30-40 minutes with 1 to 1.8 ratio of water with the lid closed and seasoned with salt and black pepper.<br />
Vegan burgers are fried evenly in a pan.<br />
Tomato, scallion, coriander, lettuce and purple onion are finely chopped into brunoise.<br />
Avocados are diced larger and the fried vegan burger is chopped into large pieces.<br />
Rice, greens, garnishes and vegan burger are placed on tortilla bread, respectively, and wrapped evenly by covering the edges.<br />
The outside is fried and served in a toaster or grill.</p>

1/2 cup uncooked quinoa<br />
one 14-ounce can black beans, rinsed and drained<br />
1–2 individual chipotle peppers (not the whole can)<br />
1/2 teaspoon each: garlic powder, onion powder, chili powder, cumin<br />
1 egg, beaten<br />
1 teaspoon salt<br />
1/4 cup panko breadcrumbs<br />
Quinoa: Cook quinoa according to package directions. Allow to cool.</p>
<p>Mix: Place black beans, quinoa, chipotles, and spices, in a food processor. Pulse just a few times, enough to make the mixture sticky and well-mixed but not completely pureed. Ideally there will be some chunks of black beans still intact.</p>

Before I met Etna on the Sicily Island of Italy, the first thing that came to my mind was what we learned at school. The word volcano would always sound creepy. However, when I got there, I had the chance to discover the beautiful sides of the volcano as well as the scary sides. BRIOCHE AND BRONTE PISTACHIO GRANITE IN BREAKFAST<br />
Starting the day with dessert with brioche and granita, a type of French bread shaped like a donut, is a great escape. Of course, we do not always recommend having breakfast this way. However, the taste of peanuts in the real sense remains in your palate. Bronte pistachio is not so easy to find in Turkey also possible to make the pistachio. In addition to granite made with Bronte peanuts, ice cream made in Sicily is a taste beyond the ice cream we have ever eaten. They serve ice cream in brioche as well as in cone.</p>

<p>Fried Vegan Burger Burritos (for 4 people)<br />
Materials</p>
<p>Vegan burger 4 pieces<br />
Mexican beans 150 g<br />
Fresh onion 50 g<br />
Coriander 20 g<br />
Lime 2 pcs<br />
Jasmine rice 60 gr<br />
Avocado 2 pieces<br />
Yedikule lettuce 3 pieces<br />
Kapidag purple onion 2 pieces<br />
Olive oil 50 ml<br />
Tomato 2 pieces<br />
Spinach tortilla bread 4 pieces<br />
Salt 6 gr<br />
Fabrication</p>
<p>Jasmine rice is boiled for 30-40 minutes with 1 to 1.8 ratio of water with the lid closed and seasoned with salt and black pepper.<br />
Vegan burgers are fried evenly in a pan.<br />
Tomato, scallion, coriander, lettuce and purple onion are finely chopped into brunoise.<br />
Avocados are diced larger and the fried vegan burger is chopped into large pieces.<br />
Rice, greens, garnishes and vegan burger are placed on tortilla bread, respectively, and wrapped evenly by covering the edges.<br />
The outside is fried and served in a toaster or grill.</p>
