The cool syrup plumps the hot cake and infuses it with additional flavor and sweetness.<br />
This Sephardic cake is an ideal Passover dessert, as it contains no flour or leavening.<br />
Tishpishti is a traditional Sephardic cake, in the spirit of nutty, sweet, syrupy North African and Middle Eastern desserts like baklava. Though it&#8217;s commonly served at Passover, when flour and leavening action are forbidden, I like it any time I need a gluten-free dessert. This is my Americanized version: a heady mix of spices and citrus, with grated apple added to the traditional nut-based cake. Rather than rose blossom syrup, I opt for a ginger-infused syrup that&#8217;s boozy with Applejack, America’s own apple brandy.</p>
<p>For the Syrup:<br />
1 cup sugar (7 ounces; 200g)<br />
1 1/2 cups unsweetened apple juice (12 ounces; 340g)<br />
2-inch piece ginger (2 ounces; 60g), unpeeled, cut in half lengthwise and smashed<br />
Zest from 1 medium lemon<br />
1 tablespoon fresh lemon juice (1/2 ounce; 14g), from about 1 lemon<br />
4 tablespoons Applejack brandy (2 ounces; 60g)<br />
For the Cake:<br />
4 large eggs (6.8 ounces; 190g)<br />
3/4 cup sugar (5 3/4 ounces; 160g)<br />
1 teaspoon (4g) Diamond Crystal kosher salt; for table salt, use about half as much by volume or the same by weight<br />
1 cup vegetable oil (8 ounces; 220g), or any other neutral oil<br />
2 tablespoons freshly grated ginger (1 ounce; 30g)<br />
2 1/2 cups almond flour (8 ounces; 230g)<br />
1 1/2 cups finely chopped walnuts (6.2 ounces; 175g)<br />
2 teaspoons (6g) ground cinnamon<br />
1/4 teaspoon freshly grated nutmeg<br />
2 cups grated unpeeled Fuji apple (12 ounces; 340g), from about 2 medium apples</p>

<p>I interrupt the oil stream after each half cup with spoonfuls of lemon juice and water. This prevents overcrowding the liquid phase with too many droplets of oil and breaking the emulsion. Continuing this process, alternating with oil and water, will yield a fluffy, thick, and stable garlic sauce. Add more oil for a thicker and milder spread, or less for a more pungent and free-flowing sauce.</p>
<p>How to Fix Toum When It Breaks<br />
Sometimes, even after you&#8217;ve delicately drizzled in oil and patiently made your garlic paste, this fussy sauce will still break—perhaps because the food processor overheated the toum, or the garlic was old and dry. Don’t worry: You can harness the emulsifying powers of an egg white to bring it back together. Just combine one egg white with a quarter cup of the broken emulsion, and process until fluffy before slowly pouring in the rest. Although this won&#8217;t be a traditional toum, it will still be delicious and creamy.</p>
<p>Stocked with homemade toum, you’ll never be left to suffer the whims of miserly takeout portions or greedy husbands again.</p>

This gutsy spread is a staple of Lebanese cuisine, and more than just another condiment. It’s great for stirring into soups and pasta, marinating chicken, and tossing with roasted vegetables; it adds an energetic punch of garlic to anything, without requiring the hassle of daily peeling and mincing. It’s also a pungent vegan alternative to mayo, and serves to perk up any sandwich. Toum has become a staple in my fridge, and, since it requires only four ingredients and a food processor to make, there’s nothing stopping you from also living beyond the limits of a few two-ounce containers.</p>
<p>What Is Toum?<br />
Toum is essentially a mayonnaise, but it&#8217;s stabilized with garlic instead of egg. Just like mayo, toum is an emulsion of oil into water made possible with the help of a third-party emulsifier.</p>

It will last several months in the refrigerator; even more in the freezer. Make cherry liqueur in the sun. Be patient, let the jar full of cherries slowly sweeten with the heat of the sun. Peel the peaches and mix with wine, leave for a week. Drain the water and add sugar and vodka. You can also try the same drink with figs. They will make great gifts in the coming months.</p>
<p>Ingredients for the Sherbet Recipe<br />
4 glasses of water<br />
5 glasses of granulated sugar<br />
The juice of half a lemon<br />
Sherbet Recipe Preparation<br />
Let&#8217;s get the water and sugar in the pot.<br />
Then take it on the stove, mix it until the sugar dissolves and let it boil.<br />
After it starts to boil, let it boil for another 15 minutes.<br />
At the end of the time, let&#8217;s put the lemon in the pot, mix well and boil for another 5 minutes.<br />
Your sherbet is ready.</p>
<p>Cinnamon Sherbet<br />
Materials</p>
<p>1 cinnamon stick</p>
<p>10 cloves</p>
<p>1 teaspoon of sorbet dye</p>
<p>1 large glass of water</p>
<p>500 g sugar</p>
<p>2,400 liters of water</p>
<p>Fabrication</p>
<p>Cinnamon, cloves, sherbet dye and a glass of water will boil for 2 or 3 minutes.</p>
<p>Boil sugar and water on one side and strain the cinnamon ingredients, drop the water in it and boil for 20 minutes on medium heat. When it cools, keep it in the fridge.</p>

<p>I mean, all food is my love language but cinnamon rolls are just the ultimate in comfort. Sometimes I wish I could just roll myself up in a soft and gooey cinnamon roll blanket and eat it whenever. But really, that would be kind of weird. So maybe I just want to wrap myself in a blanket that looks like a cinnamon roll while I eat warm soft cinnamon rolls right out of the oven!<br />
Why are cinnamon rolls so good?<br />
These particular cinnamon rolls are super soft, fluffy, and perfectly chewy, with so much gooey brown sugar cinnamon and luxurious melty cream cheese icing. The sweet, sweet smell of brown sugar and cinnamon and butter while you’re baking is absolutely irresistible. These are my DREAM rolls. If you love sweet, bread-y things, these cinnamon rolls are for you. Are you bread-y for it?!</p>

If you have instant yeast, you can use it too, there won’t be much of a difference; your rolls might rise a bit faster, depending how warm your kitchen is.<br />
Milk – I use 2% milk but any milk will work here, even almond or oat milk. Warm the milk up slightly in the microwave (I usually pop it in the microwave in 20 second increments) You want it between 105-115°F, which feels like a warm bath.<br />
Eggs – not all cinnamon bun recipes have eggs in them, but this one does and it adds extra richness and flavor because the cinnamon roll dough is enriched instead of just regular. Make sure you take your eggs out of the fridge and let the come to room temp. If you forget, just pop them into a bowl with hot tap water, which will bring them to room temp faster.</p>

Knead the dough until smooth, then pop into a lightly oiled bowl so it can proof for an hour.<br />
After the dough is puffy and proofed, tip it out onto a floured surface and roll it into a rectangle.<br />
Spread out some soft butter and sprinkle on brown sugar and cinnamon.<br />
Roll it up tightly, cut into even pieces, and place in a pan and let proof until doubled.<br />
Bake until gooey and golden.<br />
Bread flour – this one is important. You might be tempted to just use all purpose, and well, you can do that, but if you use bread flour your rolls will be soft and fluffy with just the right amount of chew. Bread flour has a higher protein content than regular all purpose – the resulting dough has more gluten in it which helps the rolls stay soft and chewy.<br />
Cinnamon – obviously cinnamon rolls need cinnamon. But the kind of cinnamon you use is important too. Cinnabon’s cinnamon (if you’re looking to create a copycat cinnabon) is a special super cinnamon-y proprietary blend called Makara – they sell it! If you don’t want to get cinnabon cinnamon, go for Ceylon cinnamon if you can.</p>

<p>Instructions<br />
In the bowl of an electric mixer, add the milk and sprinkle on the yeast. Let sit until the yeast starts to foam, 1-2 minutes. Stir in the sugar, egg, egg yolk, and melted butter then stir in the flour and salt with a wooden spoon until everything comes together into a ball of dough.<br />
Knead with the dough hook on medium for 8 minutes. Alternately, knead by hand for 8-10 minutes on a floured surface. Lightly oil and large bowl and place the dough inside.</p>

Absolutely! Cook as many pounds of shrimp as you want. They cook so fast that you can feed a huge crowd with this recipe in just a few minutes! It’s a great backyard BBQ recipe, assuming that someday we will get to have parties again.</p>

Sprinkle the yeast on to warm milk and let foam.<br />
Add sugar, eggs, and melted butter and mix throughly.<br />
Stir in the flour until everything comes together into a ball of dough.<br />
Knead the dough until smooth, then pop into a lightly oiled bowl so it can proof for an hour.<br />
After the dough is puffy and proofed, tip it out onto a floured surface and roll it into a rectangle.<br />
Spread out some soft butter and sprinkle on brown sugar and cinnamon.<br />
Roll it up tightly, cut into even pieces, and place in a pan and let proof until doubled.<br />
Bake until gooey and golden.<br />
Bread flour – this one is important. You might be tempted to just use all purpose, and well, you can do that, but if you use bread flour your rolls will be soft and fluffy with just the right amount of chew. Bread flour has a higher protein content than regular all purpose – the resulting dough has more gluten in it which helps the rolls stay soft and chewy.<br />
Cinnamon – obviously cinnamon rolls need cinnamon. But the kind of cinnamon you use is important too. Cinnabon’s cinnamon (if you’re looking to create a copycat cinnabon) is a special super cinnamon-y proprietary blend called Makara – they sell it! If you don’t want to get cinnabon cinnamon, go for Ceylon cinnamon if you can.</p>

If you have instant yeast, you can use it too, there won’t be much of a difference; your rolls might rise a bit faster, depending how warm your kitchen is.<br />
Milk – I use 2% milk but any milk will work here, even almond or oat milk. Warm the milk up slightly in the microwave (I usually pop it in the microwave in 20 second increments) You want it between 105-115°F, which feels like a warm bath.<br />
Eggs – not all cinnamon bun recipes have eggs in them, but this one does and it adds extra richness and flavor because the cinnamon roll dough is enriched instead of just regular. Make sure you take your eggs out of the fridge and let the come to room temp. If you forget, just pop them into a bowl with hot tap water, which will bring them to room temp faster.</p>

<p>Super soft and fluffy gooey homemade cinnamon rolls are my love language.</p>
<p>I mean, all food is my love language but cinnamon rolls are just the ultimate in comfort. Sometimes I wish I could just roll myself up in a soft and gooey cinnamon roll blanket and eat it whenever. But really, that would be kind of weird. So maybe I just want to wrap myself in a blanket that looks like a cinnamon roll while I eat warm soft cinnamon rolls right out of the oven!<br />
Why are cinnamon rolls so good?<br />
These particular cinnamon rolls are super soft, fluffy, and perfectly chewy, with so much gooey brown sugar cinnamon and luxurious melty cream cheese icing. The sweet, sweet smell of brown sugar and cinnamon and butter while you’re baking is absolutely irresistible. These are my DREAM rolls. If you love sweet, bread-y things, these cinnamon rolls are for you. Are you bread-y for it?!</p>
