This was before YouTube was flooded with videos on the topic, so, being a complete novice, I searched for them all over New York City (in my naiveté, I didn&#8217;t think to just ask my butcher). I went from one place to another, finding nothing but spareribs, until I finally tracked them down at Whole Foods—let&#8217;s just say they weren&#8217;t cheap.</p>
<p>That was the one and only time I bought spare ribs pre-cut in a St. Louis-style. I figured if I learned how to trim them myself, I could save a lot of time and money, and still have more control over the final product. It turns out that trimming a rack of ribs St. Louis-style was an exceedingly simple task—just two cuts and done—and to this day, I always do it myself before seasoning and smoking.</p>

This led to a pot of mushy, over-browned beans (a higher pH accelerates browning reactions) that lacked the hard-earned flavor of true slow cooking that was needed to make them a success.</p>
<p>Next, I tried a pressure cooker. It was able to soften the beans in about 30 minutes, even with the molasses already mixed in, but what I was left with was exactly what you&#8217;d expect from a gasket-sealed pot that prohibits evaporation and browning: too much broth and not enough flavor. Even after moving the pressure-cooked beans to the oven, I wasn&#8217;t able to get nearly the same browning and evaporation as I did from those cooked for a long time in the oven. That left one final method, which is the one you&#8217;ll most commonly see, including in many old recipes: par-cooking the beans in water, then mixing them with the molasses and other ingredients, transferring them to the oven, and cooking for several hours more until done.</p>

<p>My favorite beans by far were the ones I cooked start to finish in the oven. I first soaked them in salted water for several hours, drained them, then mixed them with all the other ingredients in a Dutch oven. With the cover on the pot, I slid it into a 250°F oven before going to bed. Thirteen hours later, I had the most beautiful pot of Boston baked beans imaginable. They were silky and tender, with a richly caramelized and browned crust on top and a thickened, sweet-savory sauce that coated each and every bean—the thickening was the result of bean starches leaching out into the cooking liquid during all those slow, sleepy hours. Most of the beans remained whole, or mostly whole, but some broke down, which enriched the sauce—precisely what we want when we don&#8217;t want to resort to ketchup.</p>

Toward the end, if they got too dry, you&#8217;d need to add a splash or two of boiling water, but otherwise, that&#8217;s about it. Just remember: I&#8217;m not officially recommending this, so if you burn your house down, don&#8217;t come looking for me.</p>
<p>The safer route is one that allows you to monitor the cooking process throughout.</p>
<p>Step 1: Soak Beans in Salted Water<br />
Kenji recently tested bean-soaking and -cooking methods and found that he got the best, most consistent, most evenly cooked results by soaking the beans overnight in water with one tablespoon of kosher salt per quart (about 15 grams per liter). So that&#8217;s what we&#8217;re doing here. Once the presoak is done, drain them well, rinse them with fresh water, and add them to a pot.</p>

Traditionally, the cut used is salt pork, which is the salted and cured slab of thick fat that runs along a pig&#8217;s back. It adds a deep, pure pork flavor to the beans, but you do need to watch out for two things. First, if you use a piece of salt pork that&#8217;s solid fat, with no stripe of muscle at all, you may want to cut the quantity slightly (say, from a half pound down to a third of a pound or so per pound of beans). If you don&#8217;t, you can end up with some seriously greasy beans&#8230;good if you&#8217;re a lumberjack, but not great otherwise.</p>
<p>Second, some salt pork comes with plenty of salt still clinging to it. If yours does, you&#8217;ll want to wash the excess off, lest your beans end up oversalted.</p>
<p>If you can&#8217;t find salt pork, you can, of course, substitute slab or thick-cut bacon. Since bacon comes from the belly, the cut has a higher ratio of lean muscle to fat than salt pork does. You can stay at a half pound per pound of beans, or you can go wild and bump it up to three-quarters of a pound if you want them extra bacon-y. That&#8217;s not such a bad thing, since the bacon adds a smoky flavor that&#8217;s probably not too far off from the taste of the beans back when the Pilgrims cooked them in the flickering embers of a dying wood fire.</p>

<p>I always cook my beans with some aromatics, like onion, carrot, garlic, and woodsy herbs such as rosemary, sage, bay leaf, and/or thyme. It&#8217;s not necessarily traditional to do this for Boston baked beans, but the aromatics always add enough of a flavor boost to all my bean dishes that I see no reason not to do it here as well.</p>
<p>Bring the pot to a gentle simmer, then cook the beans until they&#8217;re done. I made the mistake early on in my testing of precooking them to just shy of doneness, and the result was an endless baking time due to the powerful effect of molasses. Take my word for it: You want the beans creamy and tender before they even go in the oven.</p>

It&#8217;s a method that works, but there are a few key steps needed along the way for the beans to come out just right.</p>
<p>While the beans are cooking, I prep the other ingredients, cutting the salt pork into large chunks, dicing the onion, and combining the molasses with the mustard, salt, and plenty of freshly ground black pepper.</p>
<p>Molasses is very thick, which makes it difficult to combine with the beans. The solution: As soon as the beans are done, take a couple of cups of the bean-cooking liquid and mix it with the molasses to thin it out. A lot of recipes have you drain and discard the cooking water and replace it with fresh water, but that&#8217;s a terrible idea. That bean water is loaded with bean starch and flavor, two things you absolutely want to keep in the bean pot.</p>

It started to be more abundant in our work. So our turnover is increasing. In other words, every week is going higher than last week. Hopefully, this process will make all of our tradesmen smile ”.</p>
<p>Europeans are great hope<br />
Turkish citizens, who generally live in Europe but come to the country for the holidays, add vitality to the spice industry. The kilograms of spices purchased by expats to take with them during the return process make the people in the sector smile.</p>
<p>Speaking on this subject, Tezcan said, “These European citizens are not only spice, they are mobilizing all sectors with Allah&#8217;s permission. Because there costs with costs in Turkey are very different. From here, they can shop almost 50 percent more economically than in Europe. This is an Istanbul based international food conference that speaks about the food issues. How about getting a different taste with spinach in the fridge and potatoes in the pantry this time?<br />
Those with small children know that almost all of them go through a period where they eat the same meal morning and evening. They reject the new one as different in appearance, texture or smell. Parents say, “This is broccoli, tiny green trees, you will love it for a try…” Or they resort to various tricks to hide those green trees among the butterfly pasta. While doing these, we believe in the importance of trying different flavors as parents. We know that the more the child&#8217;s palate develops, the more he tries different foods required for his health, and the more pleasure he gets from eating.</p>
<p>Maybe we eat broccoli, but when was the last time we tried it with, say, peanuts? But when was the last time we adults tasted a meal we had never eaten before?</p>
<p>To be brave in the kitchen, one must first get rid of prejudices. As a matter of fact, some flavor combinations can be seen as strange in one culture and become indispensable in another cuisine. The potato and cabbage duo is necessary for example in Ireland for a warming porridge called colcannon, and for a soup called caldo verde in Portugal. In Sweden, biff à la Lindström contains beets and capers, in Lebanon, yakhnite zahra comes from an unaccustomed combination of fresh coriander, lamb and cauliflower. Let&#8217;s look backwards; yogurt, buttermilk and salt duo in the one coming to visit Turkey, yogurt may be quite different to that used in sweet dishes.</p>

The photos you see here use about half the amount of sauce that the recipe makes, and that’s what the estimated nutrition is for too. I have a little container of the other half of the sauce in my fridge ready for tomorrow’s steak.</p>
<p>I wrote this recipe with a double sauce because I love my sauce and it’s an avoidable tragedy to run out of sauce. It’s also much easier and more forgiving when making sauce to double up if you are a less confident cook. If you prefer to have just the right amount, scale the recipe for 1, but make 2 steaks (or leave the recipe as-is and make 4 steaks).<br />
Along with the tableside presentation, the pièce de résistance was the flambé. Did it do anything functional? Not really. A flambé doesn’t cook off the alcohol completely. It looks fantastic though, and it’s your choice if you want to add a little bit of flair. Personally, I never do it: the smoke and sizzle of a hot cast iron is more than enough drama for me.</p>
<p>Whatever you choose, you should not throw a lit match in, and never pour alcohol over an open flame.</p>

2 cups chopped butternut squash, fresh or frozen<br />
2 cups mirepoix, fresh or frozen<br />
1-2 cups chopped potatoes, fresh or frozen<br />
1 cup uncooked brown lentils<br />
3 cloves garlic, minced<br />
1 teaspoon herbes de Provence (or other spices you like)<br />
1/2 teaspoon salt (more to taste)<br />
4-5 cups vegetable or chicken broth<br />
Instant Pot Instructions: From frozen, 15 minutes on high pressure + 10 minutes natural release.<br />
Slow Cooker Instructions: From frozen, 6 hours on high.<br />
Final Step: Blend a little of the soup with 1/4 cup olive oil, return to pot, and stir in 1-2 cups chopped kale. Finish with some lemon juice or red wine vinegar.<br />
Season to taste (add the sherry, vinegar, and/or lemon juice at this point) and to really go next level, serve with crusty wheat bread and a little Parmesan cheese. It’s called Detox Balance.<br />

<p>Instant Pot Instructions: Place same first group of ingredients in the Instant Pot and cook on the soup setting for 30 mins with a quick release. Follow the same blending instructions and then add kale and parsley.</p>

So demanding is it that some famous food bloggers have become the new connoisseurs of the culinary world, with invites to critique some of the best and hottest places to eat around the world.</p>
<p>From the humble platform for sharing recipes, food blogging has become highly competitive. Some bloggers have managed to build productive businesses out of their passion for food, and they come from around the world.</p>

<p>When my dear friend asked if I’d like to come over for a marshmallow making party, you better believe I was over there in a hot second.</p>
<p>Marshmallows are one of those things where it really is helpful to have a stand mixer or prepare yourself now for the arm workout to come.</p>
<p>Allow to cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely. Or you could just eat them warm. That’s probably the best idea. Makes about 2 1/2 dozen cookies.</p>
<p>Once firm, carefully insert the cake ball into the candy coating by holding the lollipop stick and rotating until covered.</p>

<p>CAN I USE LEFTOVER GRAVY?<br />
What is leftover gravy?! I’m not sure I’ve ever seen leftover gravy. Just kidding! (Sort of.)</p>
<p>Yes, you can use the leftover gravy in lieu of the gravy in this recipe, but you probably won’t have enough to make all the filling. I recommend making the gravy as it’s shown in the recipe, then adding whatever leftover Thanksgiving gravy you have to it for extra turkey flavor!</p>

This chicken and rice skillet stores great in the fridge for five days. If you are reheating it from the fridge, you can do so in the microwave on high in short, 30-second bursts. Or you can add it back to a skillet and reheat on low with a splash of water.</p>
<p>This dish also freezes well and can be frozen (in an airtight container) for up to three months. Thaw in the fridge before reheating.</p>

<p>Of course, it remains to be seen if little kids (like mine) will actually eat a burrito. If they don’t, then they might have to find a different house to live in. (Kidding, kidding!)</p>
<p>INGREDIENTS TO AVOID: Avocado or non-cheese dairy, like sour cream. These ingredients will not freeze and reheat well. Instead, add those to the top after you reheat your burritos!<br />
WHAT MAKES A GOOD FREEZER BURRITO?<br />
Here’s what it takes to make a really good freezer burrito:</p>
<p>Lots of protein, like chicken and beans<br />
Some starch to soak up any extra liquid, like cilantro rice<br />
Some vegetables, like peppers and onions.<br />
Feel free to add your favorite proteins and vegetables to the mix!</p>

Final Step: Blend a little of the soup with 1/4 cup olive oil, return to pot, and stir in 1-2 cups chopped kale. Finish with some lemon juice or red wine vinegar.<br />
Season to taste (add the sherry, vinegar, and/or lemon juice at this point) and to really go next level, serve with crusty wheat bread and a little Parmesan cheese. It’s called Detox Balance.<br />

The photos you see here use about half the amount of sauce that the recipe makes, and that’s what the estimated nutrition is for too. I have a little container of the other half of the sauce in my fridge ready for tomorrow’s steak.</p>
<p>I wrote this recipe with a double sauce because I love my sauce and it’s an avoidable tragedy to run out of sauce. It’s also much easier and more forgiving when making sauce to double up if you are a less confident cook. If you prefer to have just the right amount, scale the recipe for 1, but make 2 steaks (or leave the recipe as-is and make 4 steaks).<br />
Along with the tableside presentation, the pièce de résistance was the flambé. Did it do anything functional? Not really. A flambé doesn’t cook off the alcohol completely. It looks fantastic though, and it’s your choice if you want to add a little bit of flair. Personally, I never do it: the smoke and sizzle of a hot cast iron is more than enough drama for me.</p>
<p>Whatever you choose, you should not throw a lit match in, and never pour alcohol over an open flame.</p>

Watermelon peel meal, must ring, barren from dried stale bread, leftover dough and cheese tirit, bone broth papara… These were some of the meals at this project&#8217;s &#8220;Have Your Soul&#8217;s Lunch&#8221;. This is an Istanbul based international food conference that speaks about the food issues. The third conference was held on October 21 at the Sakıp Sabancı Museum, and this time the subject of &#8220;extinction&#8221; was discussed. Like last year, the main sponsor of the conference this year was Grundig. During the day, impressive speakers shared their projects and stories in the hall, where approximately 300 people gathered. They inspired to protect and preserve the environment, culture and food. The garden of the museum near the Bosphorus was transformed into a very different dining area for that day. A container with a kitchen was placed at the entrance, seating areas were prepared from pallets. Dishes from Turkey&#8217;s seven regions associated with women who are not professional chefs cook food world, but it was. While they were conductors, successful professional chefs and culinary students of Istanbul became volunteer apprentices for them. Preparations started a day ago.</p>
