Claudio Chinali, the Italian Executive Chef of Eataly Istanbul, one of the leading restaurants of Istanbul gastronomy, shared his special spaghetti recipes in MAG magazine.<br />
Here are Chef Claudio Chinali&#8217;s recipes:</p>
<p>Lemon Infused Spaghetti with Saffron and Sand Mussel<br />
Materials:</p>
<p>1 lt Lemon Infused Fish Juice<br />
320 gr &#8220;Gragnano dop&#8221; Spaghetti<br />
80 ml Saffron infusion water<br />
1 kg fresh Sand Mussels from Gallipoli<br />
20 g fresh parsley<br />
40 ml extra virgin olive oil<br />
1 clove of garlic<br />
Preparation of:</p>
<p>Put a saucepan on the fire. When it&#8217;s very hot, add some olive oil, garlic cloves, pre-cleaned clams and some lemon-flavored fish stock. Cook with a lid for 60-90 seconds until the mussels are opened. Remove the mussels from the water and set the mussel meat aside. Strain the remaining water through a fine mesh strainer to remove any grains of sand.</p>
<p>Start cooking the spaghetti in boiling salted water. Cook the pasta for just 5 minutes and drain while still half raw. Meanwhile, put a pan on the stove and add the water in which the mussels were cooked. Add the spaghetti to the pan and finish cooking in this liquid. Add a tablespoon of saffron juice and add some more lemon juice if necessary. Add chopped parsley and some olive oil to the mussels. Mix well and serve in a deep plate.</p>

<p>Vegetables<br />
Most paella has vegetables in it, especially the paella we had while we were in Valencia. Usually it’s some sort of green bean, a variety that isn’t so common here in North America. You can sub in other green beans, add peppers, asparagus, artichokes, peas, olives, beans, chickpeas, really, it’s like the proteins, go wild!</p>
<p>Stock<br />
A nicely seasoned stock as this is what’s going to add flavor to the insides of your bomba rice. That being said, if you’re salt adverse, I would do low sodium stock and then season afterwards. If you have the time, make a homemade seafood/shellfish or chicken stock, which makes it even easier to control the seasoning and flavor.</p>

<p>Flour<br />
This pizza dough works well with a variety of flours. Here are your options (use the same amount regardless):</p>
<p>Whole wheat flour yields dough with just a hint of nutty wheat flavor. I don’t find it distracting.<br />
White whole wheat flour, which is made with white wheat berries instead of red, yields 100 percent whole wheat dough with an almost undetectable amount of wheat flavor.<br />
All-purpose flour works well if that’s what you have on hand.<br />
Do not use whole wheat pastry flour; it doesn’t contain enough gluten to cooperate with yeast.<br />
Here’s how to measure flour into cups using the “spoon and swoop” method:</p>
<p>Gently stir your flour with a large spoon to loosen it up.<br />
Spoon the flour into your measuring cup (don’t scoop it in!).<br />
Level off the excess with a butter knife.</p>

Most paella has vegetables in it, especially the paella we had while we were in Valencia. Usually it’s some sort of green bean, a variety that isn’t so common here in North America. You can sub in other green beans, add peppers, asparagus, artichokes, peas, olives, beans, chickpeas, really, it’s like the proteins, go wild!</p>
<p>Stock<br />
A nicely seasoned stock as this is what’s going to add flavor to the insides of your bomba rice. That being said, if you’re salt adverse, I would do low sodium stock and then season afterwards. If you have the time, make a homemade seafood/shellfish or chicken stock, which makes it even easier to control the seasoning and flavor.</p>
