Turns out that it is possible to overcook chicken wings—even after I&#8217;d brined them in salt water, they dried out to a state beyond edible by the time the skin crisped significantly. Broiling on its own led to wings that were burnt on the outside and raw in the center.</p>
<p>I tried slow-cooking the wings in a low oven, followed by broiling, but it proved nearly impossible to get the wings to crisp evenly—all I got was wings that were crisp on the top and bottom, but soft around the edges. Desirable for an Oreo, maybe, but not for chicken wings. Similarly, brushing the wings in oil or butter proved to ultimately have a negligible impact on the result.</p>
<p>The real problem? Moisture and fat loss. Well into their baking, the wings steadily release steam and drip rendered fat, showing absolutely no signs of browning until around 40 minutes in, when all the moisture and fat is finally expelled. I decided to shift gears: My goal would be to eliminate as much moisture and fat as possible before baking them.</p>
<p>Does Pre-Steaming Help Wings Crisp?<br />
Fans of Alton Brown (including me!) may have seen his Buffalo wing episode, in which he suggests steaming the wings over a pot of water before drying, chilling, and baking them.</p>

For the topping<br />
1 and a 1/2 cups of oats (180g)<br />
1 cup of almonds (200g)<br />
1/3 of a cup of pure maple syrup (100ml)<br />
3 heaped tablespoons of coconut oil<br />
2 teaspoons of cinnamon<br />
For the fruit layer<br />
6 red apples<br />
2 cups of blackberries (400g)<br />
1 tablespoon of maple syrup (optional)<br />
1/2 a teaspoon of cinnamon<br />
method<br />
Start by making the crumble layer. Simply place the almonds in a food processor and blend for a few minutes until a flour forms, then add this flour to a mixing bowl with the oats. Next place the coconut oil, maple syrup and cinnamon in a saucepan and gently heat until the coconut has melted and everything has mixed nicely – pour this over the oaty almond mixture and stir well until all the dry ingredients are coated with the maple mix. Then leave this bowl to one side.<br />
Next peel the apples and remove the core, cutting the remaining section into roughly 8-12 pieces. Place these in a saucepan along with the blackberries and a enough boiling water to just cover the bottom of the pan, probably about a cm’s worth. Then add the extra maple syrup if you’re using it plus the cinnamon before putting the lid on the pan and allowing it to simmer for about ten minutes, until the fruit is nice and soft. While this cooks preheat the oven to 180C.<br />
Once the fruit is soft transfer it into the bottom of your baking dish and layer the topping above it. Then bake for 25-30 minutes, until the top is nicely browned. Finally serve and enjoy!</p>

3 portions of pasta, we use brown rice pasta &#8211; or 2-3 courgettes for courgetti<br />
100g cashews<br />
1 ripe avocado, peeled and roughly chopped<br />
Juice of 1 ½ lemons<br />
25g fresh basil<br />
4 tablespoons olive oil<br />
3 tablespoons water<br />
1 tablespoon nutritional yeast<br />
1 garlic clove, peeled<br />
Pinch of sea salt<br />
method<br />
Place 50g of the cashews into a food processor and pulse for a few seconds, until they’re broken up. Toast them in a frying pan until they go golden brown. Once golden, leave to one side to sprinkle on top of the pasta.<br />
Add all the rest of the ingredients, except the pasta/courgetti, in a blender and blend until smooth and creamy &#8211; adding a dash of water if needed.<br />
Toss with your pasta/courgetti and sprinkle with the toasted cashews.<br />
pesto pasta is one of my all time favourite meals, it’s my absolute go-to comfort food! so i decided to experiment with a cashew pesto to get a delicious variation on this classic pasta dish. the cashews and the avocado in the pesto add the best creaminess, whilst the basil and lemon add an amazing zing; it’s the best combination of flavours! it’s also such a quick and simple recipe too, the perfect weeknight supper!</p>

400g green lentils, washed and drained<br />
2x 400g cans coconut milk<br />
3 garlic cloves, peeled and chopped<br />
2 large tomatoes, cut into small pieces<br />
1 teaspoon ground cumin<br />
1 teaspoon curry powder<br />
1 teaspoon paprika<br />
1 teaspoon hot chilli powder<br />
1 teaspoon chilli flakes, optional<br />
method<br />
Place a pan over a medium heat.<br />
Add the chopped garlic with olive oil and salt and let that cook for 1-2 minutes before adding all the spices, followed by the chopped tomatoes.<br />
Stir well, letting the garlic and spices fry together for a few minutes before stirring through the lentils, followed by the coconut milk.<br />
Bring the mix to the boil, before reducing to simmer over a low temperature.<br />
Leave to cook, uncovered, for about 1 hour until thick and creamy – making sure to stir it every 10-15 minutes, ensuring it doesn&#8217;t stick to the bottom of the pan and adding a splash of water if it feels like it&#8217;s drying out.<br />
Once cooked, stir through a little more salt and serve. We love it with avocado, chilli flakes and coconut yoghurt.</p>

100ml almond milk<br />
130g coconut oil, melted<br />
100g raisins<br />
100g dried cranberries<br />
6 Medjool dates, pitted and chopped<br />
100g walnuts, roughly chopped<br />
Pinch of sea salt<br />
method<br />
Preheat the oven to 180C, fan setting. Line a 23cm cake tin with baking parchment.<br />
Place 1 tablespoon of chia seeds into a small bowl and mix with 4 tablespoons of water. Leave to one side to thicken up for about 10 minutes.<br />
In a large bowl, mix together the flour, bicarb, baking powder, coconut sugar, spices and a pinch of sea salt until there are no lumps.<br />
Pour in the melted coconut oil, almond milk and chia mixture. Whisk to form a smooth batter.<br />
Finally, stir through the raisins, cranberries, dates and walnuts.<br />
Pour the cake batter into the lined cake tin and bake for 35-40 minutes until crispy on top but baked through the middle &#8211; you still want it to be a little fudgy as it will solidify more as it hardens. If not baked through, place back into the oven for 5-10 more minutes, you may want to cover the top in foil to stop any burning.<br />
Once baked, remove from the oven and leave to cool before serving.</p>

For the brownies<br />
2 large sweet potatoes, peeled and cut into small cubes<br />
12 medjool dates, pitted<br />
100g ground almonds<br />

6 tablespoons maple syrup<br />
2 tablespoons almond butter, optional<br />
Water from 1x 400g can chickpeas<br />
1 teaspoon baking powder<br />
Handful of dark chocolate chips<br />
Pinch of sea salt<br />
For the chocolate sauce<br />
1 teaspoon cacao powder<br />
2 tablespoons coconut oil<br />
2 tablespoons date syrup<br />
4 tablespoons coconut milk, from a carton, or any other plant-based milk<br />
Pinch of sea salt<br />
method<br />
Preheat the oven to 180c, fan setting.<br />
Place the sweet potato into a steamer or in a saucepan with boiling water for 15-30 minutes, until they become really soft (the length of time will depend on the size of the chunks).<br />
While the sweet potatoes cook, grind the oats in a food processor until they form a flour (if not already), place to one side.<br />
Once the sweet potatoes are soft and beginning to fall apart, drain them and add them to a food processor with the pitted dates. Blend until smooth. Now add the remaining ingredients (except the chocolate) and blend until smooth. Once blended, stir through the chocolate chips (if using).<br />
Spoon the mixture into a lined baking dish and cook for 45-50 minutes until you can pierce the brownie with a fork and bring it out clean.<br />
Remove the tray and allow it to cool for at least 10 minutes – this is really important as it needs this time to stick together.<br />
For the chocolate sauce, simply place all of the ingredients into a pan over a medium heat. Stir continuously until everything is melted and has come together to form a smooth sauce, about 5 minutes. Pour on top of the brownies when ready to serve.</p>

Tomato and okra are a natural combination in terms of taste and season. But at the same time, thanks to the acid content in the tomato, the snot is also reduced.<br />
Squeezing lemon while cooking is also a useful method.</p>
<p>The most troublesome part of making okra is cleaning its stems. It is necessary to cut the stems not straight, but conical, without opening the crown completely. Otherwise, the mucilage inside the beans emerges and the consistency you want to stay away from emerges. Especially if we are talking about okra as small as a button, this is a very demanding job.</p>
<p>Well, what if we say to those who stay afraid of how to sort okra out, actually you don&#8217;t need to sort it out? Place the okra on a baking tray without sorting, removing only the thick stems, and removing the ends. Add light olive oil, salt, pepper, different spices if you wish, and a few cloves of garlic next to it. Bake for 15 minutes in the oven heated to 220 degrees. Eat the crispy caramelized okra as is or serve with a yoghurt sauce.</p>
<p>Another method is to chop the okra into rings and cook it in low oil and high heat. The mucilage inside the okra that is cooked in high fire is trapped with the heat, and the tiny okra wheels come out. You can sprinkle it on salads, rice, or even hamburgers to make them crispy.</p>
<p>You can also cook large sized okra on the barbecue. Pour spicy olive oil over them, put a few bottles on it and cook for 10 minutes on the barbecue, turning it over in half. The color of green okra cooked in this way remains green while the color of henna okra remains dark claret red. Before the summer is over, okra must be tried before the season passes!</p>
<p>Still, the pot meal, meat, chickpea and sour okra have a different place. The rules of okra without slimy for those who say that I don&#8217;t give up on the okra dish I know and want to extract it:</p>

Strain the flax seeds and add 2 tablespoons of honey and 2 tablespoons of lemon juice. Take a spoonful as needed for cough relief.</p>
<p>Salt</p>
<p>Our grandmothers were right; Gargling with salt water is a really good solution for sore throats. In fact, researches write that gargling with salt works even when there is no cold and prevents the disease. Mix 1 teaspoon of salt and warm water. Repeat the mouthwash every hour.</p>
<p>Another potion that can be applied with salt is made with orange. Soak the orange in salted water for 20 minutes. Then peel off the top but don&#8217;t peel off the rest. Add half a teaspoon of salt to the orange. Make holes in the orange with a knife. Put back the &#8220;cap&#8221; of the orange. Steam in a pan for about 15 minutes. After waiting for it to cool slightly, drink the orange and the salty orange juice that has accumulated in it.</p>

I guess when I put it like that, I changed the recipe quite a lot. I was super happy with the results: the pancakes came out super fluffy and tasted almost just like what I remember!</p>
<p>There are two key things you need to concentrate on if you want to make fluffy pancakes at home. One is the meringue – be sure that it’s well developed but not over beaten. The second one is how you cook them. Most of the recipes I see online use either frying pans on low heat or the exact same machines that they use in Japan: flat griddles with giant lids.</p>
<p>My first couple of attempts were with a frying pan with a lid. These didn’t work out for me – the heat of my gas stove, even on low, was too high. I don’t have one of those fun griddles (even though I want one) so I went with what I found at home: my crepe pan! It has a super low setting that worked perfectly. I don’t have a lid for it but my giant wok lid worked in a pinch. Fluffy pancake success! Serve them up with a dusting of icing sugar, whipped butter and maple syrup. You’ll be in heaven.</p>

always reheat your pretzels before eating for the ultimate pretzel experience: 5 minute in a 350° oven<br />
Add about 3 inches of hot tap water to a large pan or pot, then place over high heat to just below a boil. Add the baking soda and stir until dissolved, being careful not to splash it on yourself. Soak each pretzel one at a time into the baking soda water for 20 seconds, using a spoon to carefully spoon the water over the top.<br />
Once each pretzel has been dipped, brush with an egg wash, top with coarse sea salt, and immediately bake until the pretzels are deep mahogany, 8-12 minutes, rotating the pans half way through, front to back, top to bottom. Cool slightly and enjoy!</p>

Ramen is relatively new to Japanese cuisine (I’m talking like 1900s new, but that’s still newer than soba, which came about in the 1800s) so it’s pretty open to interpretation and creativity. Free-style ramen tends to be fun and different, and while some bowls are just gimmicks, sometimes you come across a joint that just blows you away. Soranoiro is definitely one those places. They do a very, very solid bowl of shoyu (soy sauce based) ramen, but really, what you need to try are the specials and the veggie ramen. The veggie ramen comes with bright orange noodles — created with paprika for both color and flavor, the broth is similarly hued in orange from pureed carrots. There’s also an egg, a mess of vegetables, ham, and a slice of chicken. Because even though this is vegetable ramen, it’s by no means vegetarian. It is, however, a light and tasty bowl. But, if you have the chance to go, get the seasonal bowl. I had one topped with deep fried fish and eggplant and it sounds like it wouldn’t be good, but it was balanced, hearty, and delicious. Also, shout-out to the mushroom ramen at Salt and Mushroom. It wasn’t the prettiest bowl around, but it was so incredibly addictive.</p>

makes 2 1/2 dozen cookies<br />
Print this Recipe!<br />
1 cup unsalted butter, softened<br />
1 cup granulated sugar<br />
1 cup brown sugar, packed<br />
2 large eggs<br />
1 1/2 teaspoons vanilla extract<br />
2 1/2 cups uncooked oats<br />
2 cups all-purpose flour<br />
1 teaspoon baking powder<br />
1 teaspoon baking soda<br />
3/4 teaspoons salt<br />
1 teaspoon ground cinnamon<br />
1/4 teaspoon ground nutmeg<br />
2 cups semi sweet chocolate chips<br />
1 cup chopped pecans<br />
Beat the sugar and butter in the bowl of a stand mixer fit with a paddle attachment. Beat until creamy, about 3 to 4 minutes. Add eggs one at a time, beating well between each addition. Add the vanilla extract and beat until blended.<br />
Whisk together the oats, flour, baking powder, baking soda, spices and salt. Add to the butter and egg mixture slowly beating on low speed until just incorporated. Stir in the chocolate chips and pecans last.<br />
Bake at 350 degrees F for 10 to 13 minutes or until they’ve reached your desired doneness. I like mine a little underdone and cook them for 10 minutes.</p>

Personally, I like bamboo skewers for quick-cooking dishes like this. Just soak them briefly in water and they work great for shrimp.</p>
<p>IS THIS EASY TO SCALE UP FOR A COOKOUT?<br />
Absolutely! Cook as many pounds of shrimp as you want. They cook so fast that you can feed a huge crowd with this recipe in just a few minutes! It’s a great backyard BBQ recipe, assuming that someday we will get to have parties again.</p>

<p>This quick pizza dough yields a crust of medium thickness that’s crisp across the bottom and a little chewy in the middle. It has a lovely, yeasty flavor with just a hint of whole wheat. I love this dough so much that I shared it in my cookbook, Love Real Food.<br />
This dough doesn’t have the elusive, stretchy, chewy, sourdough texture that I crave in authentic brick oven pizza. This homemade dough is fantastic, though.</p>
<p>INSTRUCTIONS<br />
Preheat the oven to 400 degrees Fahrenheit. Grease all 12 cups of your muffin tin or line them with papers, if necessary.<br />
In a food processor, process the cranberries for about 5 seconds, until they are broken into little bits (but not puréed—see photos). Set aside.<br />
In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Stir to combine.<br />
In a medium mixing bowl, combine the oil and honey and beat together with a whisk. Add the eggs and whisk to combine, then add the yogurt, vanilla and orange zest. Mix well.</p>

once the sauce is smooth, mix the pasta and sprouts through the sauce and spoon into a baking dish.<br />
make the topping by placing the bread and 1 tablespoon of nutritional yeast into a food processor and blending until it reaches a bread crumb like consistency.</p>
<p>Put the pasta in a pan of boiling water and cook to the instructions on the pack. once cooked, drain and leave to one side.<br />
if you’re using frozen peas, then cook them in with the pasta for the last 5 minutes of cooking time.<br />
once the pasta is cooked; drain and add the yogurt, oil, lemon juice, peas, spinach, salt and pepper.<br />
give the whole thing a good stir before serving.</p>

Ramen is relatively new to Japanese cuisine (I’m talking like 1900s new, but that’s still newer than soba, which came about in the 1800s) so it’s pretty open to interpretation and creativity. Free-style ramen tends to be fun and different, and while some bowls are just gimmicks, sometimes you come across a joint that just blows you away. Soranoiro is definitely one those places. They do a very, very solid bowl of shoyu (soy sauce based) ramen, but really, what you need to try are the specials and the veggie ramen. The veggie ramen comes with bright orange noodles — created with paprika for both color and flavor, the broth is similarly hued in orange from pureed carrots. There’s also an egg, a mess of vegetables, ham, and a slice of chicken. Because even though this is vegetable ramen, it’s by no means vegetarian. It is, however, a light and tasty bowl. But, if you have the chance to go, get the seasonal bowl. I had one topped with deep fried fish and eggplant and it sounds like it wouldn’t be good, but it was balanced, hearty, and delicious. Also, shout-out to the mushroom ramen at Salt and Mushroom. It wasn’t the prettiest bowl around, but it was so incredibly addictive.</p>

Tips for the best soft pretzels<br />

always reheat your pretzels before eating for the ultimate pretzel experience: 5 minute in a 350° oven<br />
Add about 3 inches of hot tap water to a large pan or pot, then place over high heat to just below a boil. Add the baking soda and stir until dissolved, being careful not to splash it on yourself. Soak each pretzel one at a time into the baking soda water for 20 seconds, using a spoon to carefully spoon the water over the top.<br />
Once each pretzel has been dipped, brush with an egg wash, top with coarse sea salt, and immediately bake until the pretzels are deep mahogany, 8-12 minutes, rotating the pans half way through, front to back, top to bottom. Cool slightly and enjoy!</p>

I guess when I put it like that, I changed the recipe quite a lot. I was super happy with the results: the pancakes came out super fluffy and tasted almost just like what I remember!</p>
<p>There are two key things you need to concentrate on if you want to make fluffy pancakes at home. One is the meringue – be sure that it’s well developed but not over beaten. The second one is how you cook them. Most of the recipes I see online use either frying pans on low heat or the exact same machines that they use in Japan: flat griddles with giant lids.</p>
<p>My first couple of attempts were with a frying pan with a lid. These didn’t work out for me – the heat of my gas stove, even on low, was too high. I don’t have one of those fun griddles (even though I want one) so I went with what I found at home: my crepe pan! It has a super low setting that worked perfectly. I don’t have a lid for it but my giant wok lid worked in a pinch. Fluffy pancake success! Serve them up with a dusting of icing sugar, whipped butter and maple syrup. You’ll be in heaven.</p>

But did you know that this superfood is also good for coughing? Boil 2-3 tablespoons of flaxseeds in 200 ml of water for a few minutes, until the flaxseed water is added, until it becomes jelly-like. Strain the flax seeds and add 2 tablespoons of honey and 2 tablespoons of lemon juice. Take a spoonful as needed for cough relief.</p>
<p>Salt</p>
<p>Our grandmothers were right; Gargling with salt water is a really good solution for sore throats. In fact, researches write that gargling with salt works even when there is no cold and prevents the disease. Mix 1 teaspoon of salt and warm water. Repeat the mouthwash every hour.</p>
<p>Another potion that can be applied with salt is made with orange. Soak the orange in salted water for 20 minutes. Then peel off the top but don&#8217;t peel off the rest. Add half a teaspoon of salt to the orange. Make holes in the orange with a knife. Put back the &#8220;cap&#8221; of the orange. Steam in a pan for about 15 minutes. After waiting for it to cool slightly, drink the orange and the salty orange juice that has accumulated in it.</p>

Tomato and okra are a natural combination in terms of taste and season. But at the same time, thanks to the acid content in the tomato, the snot is also reduced.<br />
Squeezing lemon while cooking is also a useful method.</p>
<p>The most troublesome part of making okra is cleaning its stems. It is necessary to cut the stems not straight, but conical, without opening the crown completely. Otherwise, the mucilage inside the beans emerges and the consistency you want to stay away from emerges. Especially if we are talking about okra as small as a button, this is a very demanding job.</p>
<p>Well, what if we say to those who stay afraid of how to sort okra out, actually you don&#8217;t need to sort it out? Place the okra on a baking tray without sorting, removing only the thick stems, and removing the ends. Add light olive oil, salt, pepper, different spices if you wish, and a few cloves of garlic next to it. Bake for 15 minutes in the oven heated to 220 degrees. Eat the crispy caramelized okra as is or serve with a yoghurt sauce.</p>
<p>Another method is to chop the okra into rings and cook it in low oil and high heat. The mucilage inside the okra that is cooked in high fire is trapped with the heat, and the tiny okra wheels come out. You can sprinkle it on salads, rice, or even hamburgers to make them crispy.</p>
<p>You can also cook large sized okra on the barbecue. Pour spicy olive oil over them, put a few bottles on it and cook for 10 minutes on the barbecue, turning it over in half. The color of green okra cooked in this way remains green while the color of henna okra remains dark claret red. Before the summer is over, okra must be tried before the season passes!</p>
<p>Still, the pot meal, meat, chickpea and sour okra have a different place. The rules of okra without slimy for those who say that I don&#8217;t give up on the okra dish I know and want to extract it:</p>

<p>You can find all materials that you can need,</p>
<p>1 glass of warm water</p>
<p>1 packet of dry yeast</p>
<p>1 glass of warm milk</p>
<p>5 tablespoons of sugar</p>
<p>1 pinch of salt</p>
<p>1 water glass measure of oil</p>
<p>3.5 cups of sifted flour</p>
<p>HOW TO DO?</p>
<p>Warm water, milk, sugar and yeast are mixed.</p>
<p>10 minutes is waited for the yeast to be activated.</p>
<p>After the fermentation process, oil is added.</p>
<p>We slowly add the flour while continuing to knead.</p>
<p>We rest for half an hour.</p>
<p>It will be shaped like a walnut, spread with egg yolk, decorate with sesame and black cumin, and bake at 180 degrees for 25 minutes.</p>
