<p>There is just no fighting it – it’s early morning, it’s cold outside, the wool mittens have made their annual appearance, Christmas music is pumping. Like, AS IF there is any restraint when it comes to a Peppermint Mocha pit stop. As if.</p>
<p>The baristas always get a little annoyed with me because I’m one of those people who has a super particular order that takes at least 15 sentences to communicate (full fat, no whip, and half the amount of syrup and chocolate) (if you’re a barista, I’m so sorry for my ways), but nevertheless, the December morning peppermint mocha is always, always, always worth it.<br />
I’ve developed something of a habit, which is great, but it also means that I now cannot start my day without a peppermint mocha. (Or Cashew Coffee. Or an Oatmilk Honey Latte. Just really any hot cozy drink.) I mean, like, even if it’s totally ridiculous and out of my way to find one, it must be done. This is my dilemma.</p>

<p>1 tbsp gelatin 1 envelope<br />
1 cup sugar<br />
2 tbsp corn syrup<br />
1 pinch salt<br />
1/4 tsp mint extract<br />
1/2 cup powdered sugar<br />
1/4 cup candy melts orange<br />
1/4 cup dark chocolate chopped<br />
Special Equipment<br />

<p>Instructions<br />
Prep<br />
Bloom the gelatin: In the bowl of your stand mixer, pour in 1/4 cup of cold water. Sprinkle the gelatin on top and mix to moisten.<br />
Pan: lightly butter an 8&#215;8 inch pan, then dust with icing sugar. If desired, line with parchment paper.<br />
Tools: Lightly butter a spatula and an offset spatula.<br />
Marshmallows<br />
In a pot, mix together the sugar, corn syrup and 1/4 cup water. Stir until the sugar is incorporated and wet, then bring to a gentle boil over medium high heat, swirling occasionally to distribute the heat. Heat until the mixture reaches 240°-245°F. When the sugar mix comes to temp, remove it from the heat and let the bubbles subside. Sprinkle in a bit of salt and add the mint extract to the gelatin. Carefully pour the sugar into the bowl of the stand mixer.</p>

Roll the dough into balls. When the dough has doubled in size, it’s time to punch it down and shape it into little balls.<br />
Dip the balls. After the balls are shaped, dip them in brown butter and a mix of cinnamon and sugar. Pop everything into a buttered bundt pan.<br />
Bake. Bake until golden, gooey, and delicious.<br />
Drizzle. Finish off with a drizzle of vanilla icing while it’s still hot so it melts into all the nooks and crannies.<br />
Enjoy! Eat it while it’s still warm, there’s nothing better, trust me!</p>

Crack the eggs into a medium mixing bowl. Add your dairy of choice and the salt. Whisk just until the egg yolks and whites are blended. Whisk in all or half of the cheese (you can reserve the other half for topping the frittata before baking, if desired). Set the mixture aside.<br />
In a 12-inch cast iron skillet (or any other large skillet that’s oven safe), warm the olive oil over medium heat until shimmering. Add the vegetables, starting with chopped onions or other dense vegetables. Cook for a few minutes, stirring occasionally, then add any softer vegetables such as zucchini. Cook until those vegetables are tender, then add any garlic or greens, and cook until fragrant or wilted. Season with salt, to taste.<br />
Traditional stovetop option: Whisk the eggs once more and pour the mixture over the vegetables. Stir with a spatula briefly to combine and distribute the mixture evenly across the pan. If you reserved any cheese, sprinkle it on top of the frittata now.</p>

Dice everything small. Be sure to dice the onions, peppers, and carrots fairly small so they almost dissolve in the sauce. Then cook those for a few minutes in olive oil before adding the standard yet delicious spices for the “sloppy” sauce—ketchup, tomato sauce, vinegar, and sugar. How can you go wrong with those flavors?<br />
Add water until the consistency is right. After you stir the cooked lentils into the mix, add some water to combine the flavors. If at any point the mixture seems too dry, add more water to thin it out.<br />
HOW TO SERVE VEGAN SLOPPY JOES<br />
I’m not going to lie—I could just eat a bowl of the lentil sloppy joe filling like it was soup. It’s that good! But that aside, serving these in traditional sloppy joe fashion is the way to go. Toast some buns, and add sliced red onion to the bottom bun, so it doesn’t get too soggy. Then pile on the sloppy joe mixture, pickles, and top bun. Bring napkins!</p>
<p>HOW TO STORE LEFTOVERS<br />
Sloppy joe leftovers can be stored in the fridge for a few days. Reheat in a skillet over low heat. Add a splash of water as they reheat to make the mix nice and saucy again.</p>

If you grew up in the 90’s, you probably remember Adam Sandler’s ode to lunch ladies around the world. I’ve been unable to eat or make sloppy joes ever since without singing that refrain, and my kids actually think I’m pretty funny for once!</p>
<p>Traditional sloppy joes aren’t hard to make, but it turns out it’s even easier to make a good vegan sloppy joe than it is to make one with beef! And it’s all thanks to one secret ingredient…</p>
<p>THE SECRET TO VEGAN SLOPPY JOES<br />
Green lentils!</p>
<p>Besides being super healthy, green lentils (also known as French lentils, or Puy lentils) are a great substitute for beef in sloppy joes. They cook up beautifully and have just the right texture and structure to be piled high on a bun. They also won’t turn mushy like the red lentils used for dal.</p>
<p>If you don’t have green lentils, you can use brown lentils as well.</p>

If you grew up in the 90’s, you probably remember Adam Sandler’s ode to lunch ladies around the world. I’ve been unable to eat or make sloppy joes ever since without singing that refrain, and my kids actually think I’m pretty funny for once!</p>
<p>Traditional sloppy joes aren’t hard to make, but it turns out it’s even easier to make a good vegan sloppy joe than it is to make one with beef! And it’s all thanks to one secret ingredient…</p>
<p>THE SECRET TO VEGAN SLOPPY JOES<br />
Green lentils!</p>
<p>Besides being super healthy, green lentils (also known as French lentils, or Puy lentils) are a great substitute for beef in sloppy joes. They cook up beautifully and have just the right texture and structure to be piled high on a bun. They also won’t turn mushy like the red lentils used for dal.</p>
<p>If you don’t have green lentils, you can use brown lentils as well.</p>

The keto world is wild and I’ve been having fun tracking my macros (fats and proteins and net carbs). And I’ve been seeing results which is what makes it so satisfying. It’s like gamifying my weight and I gotta say, I’m a sucker for gamified anything.<br />
There’s about 2 grams in a 1 tablespoon serving, which doesn’t sound so bad but the thing is that most of the carbs come from sugar which is a huge NO for keto. But, I gave in anyway and make this keto friendly low carb beef and broccoli stir fry with oyster sauce because I kept it to 1 tablespoon for 2 servings.</p>

Place the uncooked wild rice, raw chicken, mirepoix, chicken broth, and poultry seasoning in a crockpot. Cover and cook on low for 7-8 hours. The chicken should be cooked through and the rice should be soft. There will be extra liquid in the crockpot; do not drain.<br />
Remove the chicken breasts from the crockpot and allow to cool slightly. Using two forks, shred the chicken. Return the shredded chicken to the crockpot.<br />
When rice and chicken are done cooking, melt the butter in a saucepan. Add the flour and let the mixture bubble for 1 minute. Slowly whisk in the whole milk until a thick, creamy mixture forms. Stir in the wine.<br />
Add this to the rice and chicken in the crockpot and stir to combine. Add extra water or milk to adjust the consistency as you like it. Season with additional salt and pepper.<br />

<p>The poultry seasoning is a mix of several things, including thyme and sage. Even though it’s only a teaspoon, do not omit this because it adds a lot of the flavor. If you don’t have any, just use any other herb seasonings that you like. Thyme and sage are the best in my opinion.</p>

Yeast – this recipe uses active dry yeast which needs to be dissolved in a bit of liquid before using – in this case we’ll sprinkle it on to milk. If you have instant yeast, you can use it too, there won’t be much of a difference; your rolls might rise a bit faster, depending how warm your kitchen is.</p>
<p>Milk – I use 2% milk but any milk will work here, even almond or oat milk. Warm the milk up slightly in the microwave (I usually pop it in the microwave in 20 second increments) You want it between 105-115°F, which feels like a warm bath.</p>
<p>Eggs – this is a extra rich dough with eggs in it. Not all monkey bread recipes have eggs in them, but this one does. I love the extra flavor and plushness the eggs gives this dough.</p>
<p>Bread flour – this one is important. You might be tempted to just use all purpose, and well, you can do that, but if you use bread flour your monkey bread will be soft and fluffy with just the right amount of chew. Bread flour has a higher protein content than regular all purpose – the resulting dough has more gluten in it which helps the little monkey bread balls stay soft and chewy.</p>
<p>Cinnamon – fresh cinnamon is best! We’re going to go with a fairly high cinnamon to sugar ratio so each bite is bursting with cinnamon goodness.</p>

Make the dough. Use a stand mixer to do all the hard work. All it takes is a quick knead with a dough hook and you’re good to go.<br />
Let it rest. After your dough is ready, it’s time for a rest so it can puff up. Now’s a good time to have a cup of coffee or tea.<br />
Roll the dough into balls. When the dough has doubled in size, it’s time to punch it down and shape it into little balls.<br />
Dip the balls. After the balls are shaped, dip them in brown butter and a mix of cinnamon and sugar. Pop everything into a buttered bundt pan.<br />
Bake. Bake until golden, gooey, and delicious.<br />
Drizzle. Finish off with a drizzle of vanilla icing while it’s still hot so it melts into all the nooks and crannies.<br />

makes 2 1/2 dozen cookies<br />
Print this Recipe!<br />
1 cup unsalted butter, softened<br />
1 cup granulated sugar<br />
1 cup brown sugar, packed<br />
2 large eggs<br />
1 1/2 teaspoons vanilla extract<br />
2 1/2 cups uncooked oats<br />
2 cups all-purpose flour<br />
1 teaspoon baking powder<br />
1 teaspoon baking soda<br />
3/4 teaspoons salt<br />
1 teaspoon ground cinnamon<br />
1/4 teaspoon ground nutmeg<br />
2 cups semi sweet chocolate chips<br />
1 cup chopped pecans<br />
Beat the sugar and butter in the bowl of a stand mixer fit with a paddle attachment. Beat until creamy, about 3 to 4 minutes. Add eggs one at a time, beating well between each addition. Add the vanilla extract and beat until blended.<br />
Whisk together the oats, flour, baking powder, baking soda, spices and salt. Add to the butter and egg mixture slowly beating on low speed until just incorporated. Stir in the chocolate chips and pecans last.<br />
Bake at 350 degrees F for 10 to 13 minutes or until they’ve reached your desired doneness. I like mine a little underdone and cook them for 10 minutes.</p>

INSTRUCTIONS<br />
Preheat the oven to 425 degrees Fahrenheit for the traditional stovetop method, or 350 degrees for the baked methods (casserole or mini/muffins).<br />
Crack the eggs into a medium mixing bowl. Add your dairy of choice and the salt. Whisk just until the egg yolks and whites are blended. Whisk in all or half of the cheese (you can reserve the other half for topping the frittata before baking, if desired). Set the mixture aside.<br />
In a 12-inch cast iron skillet (or any other large skillet that’s oven safe), warm the olive oil over medium heat until shimmering. Add the vegetables, starting with chopped onions or other dense vegetables. Cook for a few minutes, stirring occasionally, then add any softer vegetables such as zucchini. Cook until those vegetables are tender, then add any garlic or greens, and cook until fragrant or wilted. Season with salt, to taste.<br />
Traditional stovetop option: Whisk the eggs once more and pour the mixture over the vegetables. Stir with a spatula briefly to combine and distribute the mixture evenly across the pan. If you reserved any cheese, sprinkle it on top of the frittata now.</p>

Here are a few tips for successful vegan sloppy joes:</p>
<p>Don’t cook the lentils in the skillet with the sauce. If you do, they’ll soak up too much liquid. Cook the lentils separately, and then stir them into the simmering base sauce.<br />
Dice everything small. Be sure to dice the onions, peppers, and carrots fairly small so they almost dissolve in the sauce. Then cook those for a few minutes in olive oil before adding the standard yet delicious spices for the “sloppy” sauce—ketchup, tomato sauce, vinegar, and sugar. How can you go wrong with those flavors?<br />
Add water until the consistency is right. After you stir the cooked lentils into the mix, add some water to combine the flavors. If at any point the mixture seems too dry, add more water to thin it out.</p>
<p>HOW TO STORE LEFTOVERS<br />
Sloppy joe leftovers can be stored in the fridge for a few days. Reheat in a skillet over low heat. Add a splash of water as they reheat to make the mix nice and saucy again.</p>

If you grew up in the 90’s, you probably remember Adam Sandler’s ode to lunch ladies around the world. I’ve been unable to eat or make sloppy joes ever since without singing that refrain, and my kids actually think I’m pretty funny for once!</p>
<p>Traditional sloppy joes aren’t hard to make, but it turns out it’s even easier to make a good vegan sloppy joe than it is to make one with beef! And it’s all thanks to one secret ingredient…</p>
<p>THE SECRET TO VEGAN SLOPPY JOES<br />
Green lentils!</p>
<p>Besides being super healthy, green lentils (also known as French lentils, or Puy lentils) are a great substitute for beef in sloppy joes. They cook up beautifully and have just the right texture and structure to be piled high on a bun. They also won’t turn mushy like the red lentils used for dal.</p>
<p>If you don’t have green lentils, you can use brown lentils as well.</p>

In the bowl of an electric mixer, add the milk and sprinkle on the yeast. Let sit until the yeast starts to foam, 1-2 minutes. Stir in the sugar, egg, egg yolk, and melted butter then stir in the flour and salt with a wooden spoon until everything comes together into a ball of dough.<br />
Knead with the dough hook on medium for 8 minutes. Alternately, knead by hand for 8-10 minutes on a floured surface. Lightly oil and large bowl and place the dough inside.</p>

Yeast – this recipe uses active dry yeast which needs to be dissolved in a bit of liquid before using – in this case we’ll sprinkle it on to milk. If you have instant yeast, you can use it too, there won’t be much of a difference; your rolls might rise a bit faster, depending how warm your kitchen is.</p>
<p>Milk – I use 2% milk but any milk will work here, even almond or oat milk. Warm the milk up slightly in the microwave (I usually pop it in the microwave in 20 second increments) You want it between 105-115°F, which feels like a warm bath.</p>
<p>Eggs – this is a extra rich dough with eggs in it. Not all monkey bread recipes have eggs in them, but this one does. I love the extra flavor and plushness the eggs gives this dough.</p>
<p>Bread flour – this one is important. You might be tempted to just use all purpose, and well, you can do that, but if you use bread flour your monkey bread will be soft and fluffy with just the right amount of chew. Bread flour has a higher protein content than regular all purpose – the resulting dough has more gluten in it which helps the little monkey bread balls stay soft and chewy.</p>
<p>Cinnamon – fresh cinnamon is best! We’re going to go with a fairly high cinnamon to sugar ratio so each bite is bursting with cinnamon goodness.</p>

Place the uncooked wild rice, raw chicken, mirepoix, chicken broth, and poultry seasoning in a crockpot. Cover and cook on low for 7-8 hours. The chicken should be cooked through and the rice should be soft. There will be extra liquid in the crockpot; do not drain.<br />
Remove the chicken breasts from the crockpot and allow to cool slightly. Using two forks, shred the chicken. Return the shredded chicken to the crockpot.<br />
When rice and chicken are done cooking, melt the butter in a saucepan. Add the flour and let the mixture bubble for 1 minute. Slowly whisk in the whole milk until a thick, creamy mixture forms. Stir in the wine.<br />
Add this to the rice and chicken in the crockpot and stir to combine. Add extra water or milk to adjust the consistency as you like it. Season with additional salt and pepper.<br />

<p>The poultry seasoning is a mix of several things, including thyme and sage. Even though it’s only a teaspoon, do not omit this because it adds a lot of the flavor. If you don’t have any, just use any other herb seasonings that you like. Thyme and sage are the best in my opinion.</p>

Let it rest. After your dough is ready, it’s time for a rest so it can puff up. Now’s a good time to have a cup of coffee or tea.<br />
Roll the dough into balls. When the dough has doubled in size, it’s time to punch it down and shape it into little balls.<br />
Dip the balls. After the balls are shaped, dip them in brown butter and a mix of cinnamon and sugar. Pop everything into a buttered bundt pan.<br />
Bake. Bake until golden, gooey, and delicious.<br />
Drizzle. Finish off with a drizzle of vanilla icing while it’s still hot so it melts into all the nooks and crannies.<br />
